About this Cook
My husband and I have three children and we enjoy traveling, dining, and the outdoors.
My favorite things to cook
My favorite things to cook are cookies and muffins, slow cooker recipes, and grilled meats and vegetables. I also enjoy making foods that make my family happy such as pancakes, gaucamole, and steak.
My favorite family cooking traditions
Every year I bake about 5 to 6 different kinds of cookies for the holidays. For holiday dinners, everyone brings a dish to share and I usually make roasted potatoes and brownies (and bring my cookies).
My cooking triumphs
Any time my husband, children or guests say it is delicious. Also, if I have the whole dinner ready at the same time I'd have to say that is a triumph because it doesn't happen as often as I'd like.
My cooking tragedies
About 11 years ago I attempted to make my first turkey for Christmas dinner. Although it thawed for about three/four days in my refrigerator it was still frozen when I started cooking it. It took about 10 hours to cook through. My guests had to wait over 5 hours to eat it.

Healthy Banana Cookies
I only had one banana, so I made the recipe for 12. I was out of rolled oats, so I used almost 2/3 cup oat bran instead. I didn't have any dates either. I did, however, add 1/4 tsp cinnamon, 1 Tbsp brown sugar, and a handful of chocolate chips. They taste good with a chewy, gooey texture.

To Die For Blueberry Muffins
I have been making this recipe for years! They are absolutely delicious! I must admit, though, that I have never made the crumb topping. They are great without it! I have also adapted this recipe for banana muffins by using about 2 medium ripe bananas, 1 tsp of cinnamon, and enough chopped walnuts to taste. When I want the muffins a bit more healthy, I use 1/2 cup whole wheat flour and 1 cup all-purpose flour. My kids have never noticed a difference! I have used both fresh and thawed frozen blueberries (and lots of them) and they are great either way!

Hasty Chocolate Pudding
I love this pudding! I have made it several times and finally remembered to review it. I do not use the microwave; prefer the stovetop. As it is great on its own, I have combined it with a graham cracker crust and homeade whipped cream for special deserts. I also add butter and vanilla after it is cooked.
