Easiest Peanut Butter Fudge

Love the taste of this fudge! I used the 1,2,3 cup change, but after mixing it all together added a few spoonfuls more peanut butter and a pinch of salt to cut down the sweet. I sifted the confectioner's sugar and beat with a wooden spoon. I lined the dish with greaseproof paper. Fudge can be hard (no matter what people say) so here are my tips, bring the sugar up to boil gently don't just crank the heat up the whole time, I timed from when there were bubbles on most of the surface (if that helps), and I started from the center of the mix and worked the sugar in slowly from the outsides of the bowl when using a wooden spoon to stop lumps. If your mix went too hard or to pebbles it may be because you cooked the sugar/butter mix too long, boiling evaporates the water content so you may have to add some back in like others have done. It should be in the soft ball area if you want to check. On the flip side if it didn't set you may not have cooked it long enough (too much moisture in the butter mix which has happened to me HEAPS). It can also be the weather,altitude etc. If the butter separates it could be for the same reason, I'd just dab it off with paper towels. Never refrigerate fudge, its porous so it absorbs a lot of moisture from the wet air in the fridge (hence why you're usually told to keep it in an airtight container.) Good eats has a good episode on this where Alton explains most of this so that might be helpful to watch if you're still a little confused

Emily's Famous Marshmallows

Great tasting marshmallows. I mixed the icing sugar with a little corn starch to keep it flowing better (it's a bit warm here so it tends to clump). I just used a saucepan and heated it gently for the gelatin and it worked fine. I didn't have too much of a problem with the syrup and gelatin bubbling, I used a big pot and let it sit for a minute before I whisked the gelatin in. The only hard part was trying to whisk egg whites and syrup together with a hand mixer (good workout) I also let mine sit overnight before cutting

Old Fashioned Hard Candy

This came out great, just made it today. I used peppermint and raspberry flavoring (green and red for Christmas), and I waited for it to harden and used a meat mallet to break it up into pieces. I lined the pans with foil and cooking spray so no mess to clean up and no sticking

Hasty Chocolate Pudding

Amazing chocolate pudding that took less than 10 minutes to make, the only other recipe I have takes half an hour on the stovetop. I added about 1t instant coffee granules before cooking and a little butter (about 1T) with the vanilla for a better texture and to make it glossy.

Quinoa Tabbouleh

Quite a good salad, I like to add lots of other veges, whatever I've got on hand usually works well in it, the only thing I did differently was to make the vinaigrette separately so I could taste it first. A good way to use quinoa

this was the first oven pancake I've tried and I really enjoyed it, the only thing I didn't like is there was way too much butter, and it still kind of stuck, but other than that it was crispy and light.

Pie Crust IV

This makes a lovely pie crust, its light and flaky, I like to keep the butter and water as cold as possible before making it, I find it makes it flakier. This is definitely a keeper and I'll be making it again

Grandma's Egg Custard Pie

This was a nice custard pie, quite delicate. It was even better the next day. I agree you need to add the milk slowly while whisking to temper the eggs,and be careful not to overcook it. I used a pie crust recipe from this site.

Playgroup Granola Bars

These are great, I don't usually like bars like this but these had a really nice flavour. The only things I changed were to use wholemeal flour, some sunflower seeds as well and I used 1/4 cup brown sugar and they were still sweet.

Absolutely brilliant! They were so light and fluffy I ate 2 before the icing had set! I've tried it with and without the breadmaker and both ways work well, also I made a lot more than 12 rolls both times

Easy Mint Chocolate Chip Ice Cream

This one was perfect, I'm a little scared of custard base ice creams and I've been looking for an eggless recipe that actually looks and tastes like the good stuff, and this is definitely it. I did add more essence and used my own peppermint plant but that's just cause I love peppermint
