Mexican Rice III
Very good! My Spanish girlfriend calls this Spanish rice, since you fry the rice. Whatever....it's good. I drained a can of diced tomatoes and combined juice with vegetable broth for 2 cups fluid total; 3 mini, multi-colored sweet peppers for color; combined onion and rice together and sauteed until rice just began to brown; added cilantro just before serving.

Potato and Bean Enchiladas
Good stuff! I used garbanzo beans, sweet potato, and salsa in place of the ketchup. Stirred the potato and spices halfway through the first 20 minute bake and added an 8 oz. can of tomato sauce. I made individual enchiladas and only needed 10 tortillas. Still a little dry, but not horribly so. I think next time I will: add some green chili for moisture and spice; fix this as a double layer casserole; heat through at 325 after combined.
