Brandied Orange and Cranberry Sauce

This is a great cranberry sauce. I don't use grated zest. Instead I use a vegetable peeler to slice some of the orange peel into long strips. After boiling in step 1, I cut/chop some of the orange peel into small pieces. I discard the extra peel. I don't measure my cranberries. I just use 1 whole bag of fresh cranberries. In step 3, I boil for a lot longer (15 mins??). I like my cranberry sauce to be very thick. I usually use an orange flavored brandy.

Vegetable Dip

Mmmmm. This was yummy. It's not the common vegetable dip that is typically served. I like it because it's "something different". It went very well with red peppers.

Artichoke Rice Salad

Cucumber Sunomono

This was an interesting change from the typical cucumber salads. I don't like it too sweet, so I cut down on the sugar. I didn't have fresh ginger, so I used dried/ground ginger instead.

Sweet Potato Salad

I get lots of compliments when I make this salad. It's very tasty. I found it tastes better when you make it in advance and let the flavors mix overnight. I also make more (about double) "dressing" than the recipe calls for. I found it a little bit of a pain to cook the potatoes, but I don't usually make potato salads. So, no strikes against the recipe. It is worth the effort though, since it tastes so good.

Texas Slaw

As others have said, this is not your typical coleslaw. This is very different and tasty. I love cilantro and this is yet another dish that I can enjoy it in. We've nicknamed this "Cowboy Coleslaw" in my house.

Mom's Seafood Pasta Salad for a Crowd

This is a great recipe. People frequently ask me to make this salad. And it's fairly easy to make too. I normally use 1/2 lb of salad shrimp (from the frozen section) instead of the canned shrimp. Sometimes I'll add a little bit of Old Bay seasoning. One time I did not green onions so I substituted chopped sweet onion, and it did not turn out as well. Stick with the green onion. Also, when I mix the ingredients, I start by combining the mayo and the tuna at the bottom of the bowl so that I can mix it well. Then I add the pasta and other ingredients.
