Moist Carrot Cake
I just made this cake for my family this past weekend; everyone could not stop eating it! I did modify it a little per other commentors advice, like more spices (ginger,nutmeg,allspice)the flavor was outstanding. I did however use the advice of using 1/2cup oil and 1/2cup applesauce although it was still moist I think next time I might use a whole cup of oil and 1/2cup applesauce I prefer it extra moist :) I iced it with cream cheese frosting adding 1/2tsp ground ginger and 1tsp ofcinnamon yum!
