Caramel Shortbread Squares
Awesome recipe! I changed the serving amount, as I was serving a larger crowd and doubled the recipe. I received compliment after compliment about these cookies. I didn't change any of the ingredients, but after the first step, I froze the cookie, then after making the caramel, I returned the pan to the freezer, then I melted the chocolate in a double boiler, added to the layered cookie and returned to the freezer. WONDERFUL recipe, and by the way the caramel in this recipe is perfect; it is as sweet as a candy shoppe's caramel.
