About this Cook
I belong in the kitchen! I can come home from my 9-5 job and start making dinner and it has a way of relaxing me. My husband and I live in a great little town in Central PA. He loves to eat and I love to cook. We make each other very happy. I love to go to the beach, watch football (mostly Penn State and Steelers), and I admit it, one of my favorite things to do is go shopping!
My favorite things to cook
Comfort Food pretty much sums it up. Soups, fish, chicken, potatoes. I love to make casseroles but my husband isn't a huge fan of his food touching other food on his plate. Weird, I know. I will stuff a chicken breast with just about anything - pesto, apples & cheddar, broccoli, bruschetta, mushrooms and swiss!
My favorite family cooking traditions
When my family has game night I always bring ice cream and root beer for Root Beer Floats. Every Sunday my mom and I cook lunch for my family. Sometimes we just look in her pantry and make up our own dishes with what she has on hand that day. When we have family come to visit, my mom, sisters, neice, and I have ALOT of fun in the kitchen.
My cooking triumphs
Chicken Tortilla Soup - a great party soup! Salmon Chowder...I'm very proud of that one. Last night I made my own tartar sauce and that turned out surprisingly well too. I've posted my recipe for it on here...it's called Dill Tartar Sauce but it's still in the review stage.
My cooking tragedies
A tator tot green bean casserole. It was okay, but I won't be making that one again. Big surprise...Husband gave it low scores - after all, it was a casserole. Also, I'm not a baker...I hate to measure ingredients.

Campbell's Kitchen Chicken Broccoli Divan
This is such a good dish. Make sure you cook it until the bread crumbs and butter make a nice crispy, brown topping.

Mexican Bean Salad
Love this recipe. Eat it as a salad one day and a dip with tortilla chips the next. I didn't want my salad to be Mexican so I left out the cumin and hot spices and sauce. It was very good that way. The next day I ate it as a dip and added the seasonings to make it Mexican. I only added one bell pepper. Colorful and delicious!
