Ultimate Irresistible Granola

Expected granola goodness; what I got was granola greatness. Made a half batch adding a tsp of cinnamon and omitting fruit (not always in a fruit mood)... I intend to have this for breakfast, but the ice cream is begging to be covered in it - I shall do both! P.S. Bake with kitchen window ajar, neighborhood cats will swarm...

Quite enjoyable; quite easy. Used maple sugar sausage in the second batch (preferred) and thought the red pepper was crucial to flavor (more so than the green). Not sure, but I think this is actually better zapped the next day.

Slow Cooker Chicken Taco Soup

Ingenious concept... Dump cans and frozen chicken in Slow Cooker, spend rest of day 'facebooking'. Why didn't I think of this? Not to mention, the scrumtrulescent soup at the end of a long day of lounging... mmm. And forgiving! I used an ancient can of Miller High Life (from the back of the fridge; God knows how it got there in the first place), used pinto instead of chili beans and took RaisinKane's suggestion for Bill Echols' seasoning blend (1 TBSP chili powder 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp crushed red pepper flakes 1/4 tsp dried oregano 1/2 tsp paprika 1 1/2 tsp ground cumin 1 tsp salt 1 tsp black pepper). I'll probably sweat my way through bowls of this all summer long... it is SO good!

Perfect Sesame Chicken

This recipe is gold! Makes better-than-Chinese-restaurant-quality Sesame Chicken... I don't even miss the fortune cookies a little bit. So worth the hassle.

Cream Puffs

Nostalgia! Profiteroles! Filled these babies with Old-Fashioned Vanilla Pudding from this site (no comparison!) and added a little vanilla to the dough. If puffs didn't form their own holes, poking with a toothpick was key for steam-release. Leaving vanilla out, puffs can also be stuffed with non-dessert salads (crab, chicken, etc).

BBQ Chicken Calzones

Yes! This recipe agrees with me and I with it! Opted not to fry chicken in bacon grease (George Foreman grill was ready & willing for that task), but this does not mean I didn't use bacon. Oh, heavens no, used extra bacon, in fact! Mixed all the BBQ sauce with the chickeny-bacony bliss at once (no drizzling) and used the herb-ified Ricardo's Pizza Crust for the dough. Easy to over-indulge on these Calzones! mmm...

Impressive Crust!! I used this with the BBQ Chicken Calzone recipe and it was to-die-for!! I did add some Parmesan to the dough and used a stand mixer to do the grunt work (dissolving yeast & sugar in H20 first). Baked on a stone; no problems with sticking... this guy's a keeper!

Exquisite Pizza Sauce

Excellent! I will definitely be making this again... still without the anchovy business and I would cut back on the honey, for sure. It is INSANELY sweet for me (but then again, so is root beer)... a teaspoon of honey would probably do it. Very quick (especially when waiting for the pizza dough to rise anyway) and easy!

Ricotta Cake

This is pretty yummy... it's best made with the full-fat ricotta and eaten cold. Resist the temptation to use a bundt pan (disastrous). Pieces cut out of the 9x13" pan, while boring to look at, were so much more moist (not soggy) and consistent in textures. Ridiculously easy as well...

Clone of a Cinnabon

These are dangerously delicious!! I used my brilliant stand mixer for mixing (dissolving yeast in 115° warm milk with a little of the sugar first) and unsalted butter instead of margarine. Proofed in warm oven (that had been heated to 200° then turned OFF) with damp (and clean obviously) dish towel o'er bowl o' dough. Took about an hour to double. Assembled as directed. Upon removal of baked rolls from oven, be sure to flip them immediately to a serving pan/plate. When it comes to the frosting... don't mess around: use an 8oz pkg of cream cheese and double the other ingredients. Also, if you have a disposable latex or nitrile glove... you can frost them to perfection with your hands. AND! Since I'm not to keen on waking up at oh-dark-thirty to bake, assembly happened the evening before. In my groggy morning stupor, these go directly from fridge to oven (not even bothering to preheat)... perfect! Prepare to be loved!!

White Chili with Ground Turkey

yuh-umm! This is fabulous! There's probably no need to change this recipe at all, but frozen corn & black beans sounded really good so I went with it... and liked it! Also, as I was adding the broth, 5 cups seemed like it was going to be a bit much for 'chili' so I stopped at 4... definitely enough fluid for us. Oh, and the cinnamon totally works! Use less if you're not sure, but I would say it's essential to the white chili flavor... We luh-uvved this recipe!!

Bake Sale Lemon Bars

So great! Tart was what I was going for so I did take the famous GourmetMommy's tips and quadruple the lemon, double eggs & flour and slightly up the sugar. Quite satisfying, indeed! Thanks Elaine for the original recipe and GourmetMommy for kickin' it up a notch!

Burrito Pie

Half-a-dozen Burrito Pies later... We absolutely love this- still!! With just two of us, this usually goes into pie plates (half fits nicely in one 9" plate). My favorite tweak has been to spread refried beans on ALL the tortilla bottoms (any leftover beans simmer with the meat mixture) and sandwich two beany tortillas in one layer. Don't forget a little taco seasoning!

Roasted Chicken with Risotto and Caramelized Onions

Delicious! Very straight-forward and surprisingly simple to make... In lieu of roasting, opted to saute cut-up chicken breasts in butter. Also, used standard long-grain white rice [hangs head in shame]... Even so, makes a great dish (just takes longer with inferior rice).

Hard Chocolate Glaze

Perfecto! This is awesome chocolate glaze! It dries beautifully and stays shiny as it dries (no weird crackly, frosty, or powdery finish) and is super easy (and tasty). I halved this recipe for detailing an UglyDoll birthday cake... An ice cream bowl set in a cast iron skillet of simmering water works well. Once melted, I immediately poured the chocolate into a plastic storage bag. After a few minutes of cooling, I snipped a tip off a corner and was able to pipe, write and draw with it. Love it! All the glaze recipes that I've messed with over the years - I now scoff at them...

Tiramisu Layer Cake

Awesome!! I made this one for my own birthday... As per other reviews, I used extra coffee, extra espresso powder, extra coffee liqueur and two coffee cake layers instead of one. I did make my own cake batter though using the BH&G White Cake recipe (didn't even consider the pkg mix for a second) and froze the layers before stacking (overnight, in fact). Also, from another review, used a mascarpone substitute: 1 (8oz) pkg cream cheese, 1/4 cup heavy cream, 2 TBSP sour cream. AND for the garnish: I folded up a coffee filter, cut myself a nostalgic snowflake and dusted the cocoa over the stencil... It was for MY birthday, after all! :-)

Award Winning Soft Chocolate Chip Cookies

Super delicious cookies!! I halved the recipes and upped the vanilla. Also works well with other flavors of pudding... I was really jonesin' for cookies last night and only had butterscotch pudding; used half choc/ half butterscotch chips too... Holy buckets- Yum! Still amazing today after they hung out in a pile under the cake dome all night... This recipe is the best reason to always have pkgs of pudding in the pantry!
