Spring Vegetable Soup

I omitted the egg noodles and used white wine and herb chicken broth. It changed the flavor some. It didn't have much substance even though it called for many vegetables. I might add barley to give more substance next time.

Fabulous Fried Cabbage

I made my own spin on this recipe. I used bacon grease instead of butter and I seasoned the cabbage with Old Bay Seasoning, which added a different kind of flavor. Not to mentioned I added some shredded carrots too. I have made this recipe twice and will make it again!!

Mrs. Sigg's Fresh Pumpkin Pie

The hardest part for me was trying to cut open the pumpkin. Otherwise it was an easy recipe. I was able to make two pies from the one recipe. My friend that I made it for raved about how good it was!

Baked Garlic Green Beans

This recipe was pretty good. I used balsamic vinaigrette and onion powder instead of the cider vinegar and minced dried onion. The frozen green beans proved a little crunchy. Next time I may try using canned beans.

Lentils and Rice with Fried Onions (Mujadarrah)

The recipe was not very tasty at all, the onions didn't help. I added some additional seasoning to wake up the taste. I also noticed that the refrigerated leftovers were very thick, I suggest you eat it all when you make it. The posted recipe makes quite a large batch.

Barley and Mushrooms with Beans

I loved the recipe. I used a white wine and herb broth that added a different flavor. I also used 5 minute barley that reduced the cooking time by 45 minutes. Great recipe that I will definitely try again, and probably add more barley.

Spinach with Chickpeas and Fresh Dill

I love spinach so I added more then the recipe called for. I didn't use all the dill called for either, it was a little overpowering in taste. Warm chickpeas was new for me, but a tasty dish. I will try this recipe again!

Jamie's Black Beans and Rice

It was an easy to make weekend meal, substituting the white rice for brown. I used fresh chopped onions and sauteed them with the thawed green peppers in olive oil. I thought it could have used a bit more flavor.
