Baked Dijon Salmon

A nice way to switch it up over my usual grilled salmon. I used one large filet rather than individual portion and it worked out fine - just increase the baking time.

Shrimp Lemon Pepper Linguini

Very easy to prepare and quite delicious! The lemon zest gives it a fresh, lively taste. I reduced the pepper a little. Used precooked shrimp, adding for just the last few minutes to coat the shrimp in the sauce and heat the shrimp through, and it worked great. Elegant enough for company.

Delicious Raspberry Oatmeal Cookie Bars

Easy and a family favorite. You can mix right in your Kitchenaid or stand mixer rather than doing by hand. Add 1/2 teaspoon cinnamon. You can use any kind of jam you want. Try with apricot preserves - my family's favorite!

Southwestern Egg Rolls

The beauty of this recipe is it is easy to modify the ingredients to meet your personal preferences and what you have on hand. I did not use spinach, japaleno, parsley or red pepper but added diced avocado, cilantro and a few squeezes of fresh lime juice. I also used vacuum packed sweet corn in place of frozen. I diced the chicken before cooking, then sauteed it in a little veggie oil, adding the remaining ingredients to the pan when the chicken was cooked most of the way. As others have recommended, I used egg roll wrappers and made Amy's Cilantro Cream Sauce from this website. Amazingly good! Highly recommend adding avocado.

Amy's Cilantro Cream Sauce

Delicious and easy to make - whir it up in the food processor for a quick sauce/dip with no lumps. I didn't have sour cream so skipped it without problems. Used 3 cloves fresh garlic in place of garlic powder and skipped the celery salt. Added a little extra fresh lime juice. Fantastic with Southwestern eggrolls and I'm looking forward to utilizing it in other ways as well.

Annie's Fruit Salsa and Cinnamon Chips

Big hit with family and friends. This recipe is very adaptable to your tastes in fruit. I used all fresh fruit - strawberries, kiwis (which add nice color), applies, raspberries, and mango. For the jam, I used apricot preserves. I did not add the sugar and don't think it is needed. A small dice on the fruit works best. Kept the raspberries whole. Made a double batch of the chips and still had some salsa left. Sprayed the tortillas with butter flavored spray on both sides, stacked 4 or 5 together and cut in wedges. Dredged in a pie plate of my own cinnamon sugar mix. Baked for about 10 minutes.

Glazed Mint Brownies

Excellent recipe! Very well received by everyone - young and old alike. Very moist and they keep well for days. My grandmother used to make these and this recipe matches hers. Better than the recipes that use hershey's syrup. For Valentine's Day, dyed the mint layer pink instead of green.

Mrs. Sigg's Snickerdoodles

Very good snickerdoodle flavor, but the cookies were very crunchy not soft on the inside as my family prefers. I will make again but will try reducing the baking time and the oven temp to see if that helps, otherwise I will continue searching for another snickerdoodle recipe.

Easy Mexican Casserole

The family really enjoyed this. I did take a lot of suggestions from other reviewers and modified according to our tastes. Left chips whole (would add more next time). Add taco seasoning to ground beef mixture. Left out olives because of personal preference and added corn. Used black bean, and Rotel in place of fresh tomatoes. Used low fat sour cream. Will definitely make again. A hearty, easy meal.

Asian Lettuce Wraps

Easy to modify to your own tastes. Quick to whip up using ingrediants I had on hand. I used ground pork instead of ground beef. Ground turkey or chicken would work as well. I didn't have chile pepper sauce so I added cayenne for a little kick. You can add other toppings for your lettuce wraps. For mine, I had julienned carrots and cucumbers, chopped peanuts, more hoisin sauce and some rice noodles tossed with a little peanut oil and rice wine vinegar. I had all the toppings on a platter and everyone enjoyed making their own wraps. It makes an appetizer that is full of lively, bright tastes without being heavy.

Tomato and Mozzarella Bites

When I saw the photos of this recipe, I thought "why didn't I ever think of this?" What a great idea - so pretty and colorful. It's a wonderful for parties. I used marinated mozzarella balls and drizzled with a little balsamic vinegar. The leaves on the basil I used were quite large so I would jst tear the basil leaf in half to get an appropriate size. Easy and elegant.

Pizza Casserole

Great recipe for a busy night. Modified slightly by using 1 lb. Cavetelli shaped pasta, 1 lb italian sweet sausage in place of the ground beef, 1 1/2 jars pizza sauce and topped with a blend of mozzeralla, parmesan, provolone and asiago cheese. To reduce the number of dishes to wash, cook your pasta in a dutch oven, and mix and bake in same pot. Looking forward to trying again and making more modifications. Like pizza, great to adapt to your favorite ingredients.

Fluffy Peanut Butter Frosting

Downeast Maine Pumpkin Bread

Everyone loved it. A pumpkin bread lover said it was the most AMAZING he had ever eaten! I used 1/2 white and 1/2 brown sugar since I didn't have enough white, and it was great - the brown sugar added a depth of flavor. Did not have ground cloves so left that out.

Baked Potato Soup V

I have made this several times and it is a family favorite. After making once or twice, I started experimenting and know make the following changes: I use 1% milk instead of whole milk (sometimes substituting chicken stock for some of the milk)and cut the butter and flour for the roux in half. It is still plenty thick and decadent enough with these calorie reducing changes. I let each person top their own bowl tableside with bacon, green onions and cheese rather than adding directly to the soup. Cubed ham is also a delicious addition. Leftovers reheat well and if to0 thick, I thin with chicken stock.

Chocolate Pretzels

Very easy and well received by a bunch of teens. used waffle shaped pretzels and Dove milk chocolate squares. Topped with a peanut butter M&M. Put my son to work unwrapping the chocolates... 12/12/09 I just made these again using the new Doves Peanut Butter chocolates. Took a little experimenting to avoid total meltdown! The Doves peanut butter chocolates melt super easy. I wound up only putting in the oven for 50 seconds at 250 degrees. Had a couple batches that totally melted until I figured it out.

Monkey Bread I

Made it for brunch and the family loved it! I found using kitchen shear to cut the biscuits in quarters worked well. Alterations: used butter instead of margarine, left out raisins and nuts due to family preferences.
