Three Cheese Manicotti II

Wonderful! I did not follow other's advice and went ahead and boiled the shells...Next time I will listen, lol! Other than the stuffing being difficult, it was an easy and tasty dish. Next time I think I'll add onions and spinach.

Vegan Bean Taco Filling

Really good, easy to follow recipe, easy to make, and freezes real well too. I ate it as a replacement for beef, and it was great. My husband ate it with his beef as a topper and really enjoyed it too!

Baked Ziti I

Excellent! Loved the sour cream in place of the ricotta. I listened to the other reviewers and put sauce on the ziti before I added the provolone. I also made it without beef, and the rest of the family that isn't vegetarian still loved it. Good recipe, can't wait to play with it a little.

Ultimate Potato Soup

Delicious! I'm a vegetarian so I substituted the chicken broth for veggie stock. I couldn't find veggie bouillon so I just left it out (needed want the extra salt anyway). I also added shredded cheddar cheese to the top after it was in the bowl. I am by no means a good chef =) and this recipe was also very easy for me, and my first try at homemade potato soup. Kids loved it too.

Vegetarian Chili

I love this recipe. I'm a vegetarian and it's hard to find things my whole family, including the kids (no one else in the family is a vegetarian) will eat. But they love this. I followed the recipe pretty close, I didn't have hominy beans so left those out, and I also used fresh garlic cloves instead of powder garlic.I also put some hot chili powder in, b/c we like it a little spicy. I think next time I'll add some fresh peppers to the mix. Other than that we left it pretty much the same. We topped ours off with cheddar cheese, and sour cream. It was easy, delicious and made enough for plenty of leftovers.

Tater Tot Casserole II

After reading the reviews I cut down on the sour cream and added a little extra cheese. I added bacon bits to the top (I'm a vegetarian, but the kids are not so bb was the compromise!) I also used minced onion flakes instead of the ff onions b/c that's what I had on hand. I think it would taste better with fresh chopped onions and some veggies too. Overall I liked well enough, and 2 out of 3 kids absolutely loved!
