Triple Berry Crisp

Reviewed: Aug. 22, 2009
This turned out pretty well for me. I cut down the butter to 3/4 cups and I was quite pleased. Can't imagine using the amount the recipe calls for. Only other thing I did different was to bake at 375 deg for the first half hour, then turned down for the remaining time to 350 deg. It came out perfect and in 45 minutes. Only reason I didn't give it 5 stars is because of the butter.

Orange Banana Nut Bread

Reviewed: Apr. 19, 2009
The only thing I liked about this banana "bread" is the orange zing from the orange zest. The texture was just blah to me. Moist yeah, but no fluffiness. I may try again with more eggs and more shortening. That tiny bit of oil didn't cut it. Sorry.

Bacon Cheese Frittata

Awesome. Will definitely make again and again. Can't believe I never tried this before. I didn't have bacon so I used sauteed breakfast sausages. And I added some garlic pepper to the eggs. Thanks for sharing.

YUMMY! I used turkey sausages and sauteed with onions. Added a little extra cheese, and some garlic powder to my mix of eggs. Really nice texture and appearance. Will definitely make again!

Apple Pecan Cobbler

Reviewed: Nov. 9, 2008
Really nice. Followed the recipe exactly except not enough pecans for the top of the cobbler. This was my first cobbler and I am quite pleased with the outcome. WARNING Do not leave out the pecans! It really brings it together. Will make again. UPDATE! OMG - Even better the next day! The texture's softened and just come together so well. Didn't even need whipped cream, just PERFECT.

One Bowl Chocolate Cake III

Reviewed: Nov. 2, 2008
Really light and moist. Only change I made was to use 1 cup cocoa powder as almost everybody suggested. I also used applesauce for all the oil. Appearance and texture wise, it was great. Taste wise, not nearly sweet enough for my taste, but it was still superb. I had doubts about the method, but surprisingly, it baked to perfection right on the 30 min mark. I never had that happen before! Definite keeper and will make again. And again.

Brunch Egg Bake

Reviewed: Oct. 26, 2008
Awesome! I made minor alterations. Used diced turkey sausage instead of ham. Omitted the mushrooms. Sauteed the onions and peppers with the sausage. Added as second layer over cheese. Added garlic powder to the egg/milk mix. Delicious!

Ground Beef Shepherd's Pie

Awesome. I used roma tomatoes, over leftover ground buffalo!! These two layers were followed by canned sliced carrots. Added a little sour cream to the mashed potatoes and two cloves crushed garlic. Just because I am a a garlic fan.

Curry Pasta Salad

Pretty good and pretty forgiving. No tri color pasta so used regular ole shell pasta. I used honey roasted peanuts since that's what I had. Also added a tbsp of sour cream with a tsp of sugar mixed in. The apples give a nice zing to this recipe.

Chocolate Zucchini Cake I

Reviewed: Oct. 18, 2008
Delightful! Super moist. Only alterations I made were substituting applesauce for half the oil. I also used sour cream in place of the sour milk. I also only had 1 1/2 cup zucchini. Worked out great. I added a tad more cocoa, just about two tsps. Definitely would make again! Thanks for sharing.

Spiced Chicken Loaf

OH WOW!! This was so good. Maybe too moist, but still good. I substituted regular breadcrumbs and I did a ketchup/brown sugar glaze about 20 mins before the end of cooking time. Not at start. This recipe is great! I will definitely be making again. And again.

Coconut Ice Cream

Reviewed: Oct. 12, 2008
Fantastic! I omitted the flakes (didnt care to have the distraction while enjoying creamy icecream). I was worried about sweetness level, so I added 1/2 cup of cane sugar. And it came out great. Still not sweet enough for hubby but he was still impressed. The texture is awesome. I will definitely make this again.
