I am a 38 yr old mother of 3 gorgeous children ages 17, 8 and 19 months. I love to laugh and have a good time. I work parttime outside my home and I love spending time with my kids and husband.
My favorite things to cook
I am all about the comfort foods.. slow cooker recipes, delicious casseroles, heartwarming soups, I love making these things. I love it when my kids tell people their favorite food is something that I make as opposed to pizza or fast food. I feel so proud.
My favorite family cooking traditions
My mothers Turkey and Stuffing that she makes at Thanksgiving. Her macaroni and cheese is awesome, and she makes this Buttermilk Pie that is amazing. My mom is an excellent cook as long as she doesnt try too many new tricks she saw on the Food Network lol.
My cooking triumphs
Well.. I think my best recipe that I make is Cottage Potatoes with Ham. The casserold dish is always scraped clean. Last Halloween my husband and I threw a Halloween Party for my 7 yr. old sons 2nd grade class and it was a huge success. I make punch w/ dry ice and floating eyeballs, I make witch finger cookies, a meatball worm, a Bug cake, plus some other ghoulish treats and it was a huge success. I was very proud.
My cooking tragedies
Last Halloween I attempted to make these meringue "Bones" for a Halloween Party I was throwing for my kids. I am not good with meringue, unless its SUPPOSED to be a liquid.

Sesame Beef
This was awesome.. my family was begging for more and I even doubled the recipe and served over leftover rice. Simple and easy!! One thing I changed was that I used Splenda instead of sugar because it was all I had. I don't think it made a difference at all.. except in cals/carbs. Will make this again and again! Better than take-out!

Scalloped Potatoes and Onions
I made this tonight in the crockpot w/ some ham on top and it made into a soup and it was DELICIOUS!!!!! I have no idea how I messed it up but it was certainly a yummy yummy mistake!

Rice Cereal Energy Bars
Just made my second batch of these. First batch didn't have chocolate chips in them and I added coconut and some various dried fruits I had on hand. Those were a huge hit! This time I added the chocolate chips and notice that they melted the second the warm peanut butter goo hit them so these will definately taste different. I bulked this recipe up with pumpkin seeds, walnuts, coconut, some left over chowmein noodles (just to get rid of them) and some dried mango and dried banana. I also left out the white sugar and used half corn syrup and half sugar free maple syrup and I used organic crunchy peanut butter and soy protein powder in place of the powdered milk. I sampled a clump before I pressed it in the pan and it was tasty so I am pretty sure the bars will also be really good. <3 this recipe.
