I am a designer at an architectural firm. I live in a cozy brownstone with my family: Patrick the boyfriend, Rambo the rabbit, Henry the cat, and Vincent the bulldog. We are soooo busy, so fast cheap and healthy meals are a must! I am all about mixing a variety of healthy foods together so make something delicious like soups.

My cooking triumphs
Just being able to plan meals two weeks in advance that are quick healthy and make my boyfriend happy seems like a good triumph to me. Although for the longest time I could not make good banana bread...that is not the case anymore :)
My cooking tragedies
Grilled cheese...all the time. I feel like the easier the food the worse it turns out.

Tilapia Scampi
Thank you. Quick and easy...however I did not bake the tilapia, I grilled it with veggies in tin foil and then added the juice to some whole wheat noodles. YUM!

Crunchy Romaine Strawberry Salad
The flavor was good, however I was not happy about all the butter and the sugar. I think next time I will toast the walnuts in the oven with the noodles to avoid the butter, then cut the sugar in half since the strawberries already provide natural sugars. The texture and taste was excellent though.

Creamy Pesto Shrimp
Fatty...of course. Great? Yes. To add to the heart attack I added a tiny bit of bacon in the sauce once I added the shrimp...VERY good. However mine turned out very oily and ugly. I would always recommend homemade pesto rather than pre-packaged because that adds the extra oil and gooey crud.
