Split Pea Soup

Great soup. Whenever I cook a ham, we freeze the bone to save for another day to make pea soup.

Baked Ziti I

Strangely enough my daughter who hates any sort of pasta or red sauce liked this. It was a HUGE recipe though and I ended up with two casseroles. The second, I froze and reheated later. The reheated one was actually better in my opinion.

Chicken Marsala

I had some dehydrated porcini mushrooms which I soaked in red wine and used in the sauce. The mushrooms made the sauce a beautiful brown colour. It was really good. Also, I added some garlic prior to browning the chicken.

Lynn's Carrot Cake

My husband wanted chocolate carrot cake for his birthday but as we are in the process of moving, I couldn't find my cook book with the recipe. This was pretty close to what I used, but not quite the same. I didn't have enough oil for the recipe and the amount indicated seemed like a ton so I substituted half for applesauce. I had just recently watched a cooking show where the pastry chef recommended mixing cake batter with a whisk instead of an automatic mixer. She said the mixer made the batter tough. I tried the whisk and it was easy and really did seem to improve the batter. It turned out really really good. Moist with a fantastic consistency. Excellent recipe!

Caesar Salad Supreme

This was a winner on all counts - good, fast and easy. I had low fat mayo in the fridge which was a great substitute. Also, I keep anchovy paste in the fridge. It's really convenient for things like this. Most deli counters sell it. I use around 1 - 2 tsp per anchovy fillet. Start with a bit and add more to taste. We had soem left over and made a salad two nights later. It was even better. The flavors had really blended well. Thanks for the great recipe!

Chicken Breasts with Balsamic Vinegar and Garlic

Wow! This is an excellent and really easy recipe. I couldn't find the balsamic in the cupboard so I used wine vinegar instead. It was a good substitute. As well I used boneless chicken thighs and they were very tender and moist. Thanks so much for the recipe. I will definitely make it again. Even my ridiculously picky teenaged daughter enjoyed it.

Creamy Rice Pudding

Yummy. I added in cinnamon and nutmeg. My mom used to make one like this when I was a kid, but she had to bake it in the oven. I have never heard of stove top rice pudding, but it was quick and easy. My daughter ate the leftovers for breakfast the next day.

Holiday Cranberry Chutney

Absolutely wonderful. I made it for Christmas instead of my regular cranberry sauce and eveyrone raved about it. Very nice. I added a little black pepper as well.

Foolproof Rib Roast

It was okay but came out way too overcooked. I think my oven is actually too well insulated. If anyone knows of a way of predicting the internal temperature based on roasting times and waiting times that would be helpful.

Chicken and Artichoke Minestrone

This was a great use of leftover chicken. I modified a bit based on what I had in my cupboard and went with canned mushrooms, artichokes, corn, frozen broccoli, and kidney beans. I didn't have any chopped tomatoes so I used a can of crushed and it was great. I had no orzo so I used rice. I kept the chili at 3/4 of a tsp and it was just right. This was a huge recipe. I think I may do it in the slow cooker next time if we are out and running around. Nice to come home to a hearty soup like this.

Mahogany Chicken Wings

Incredibly good and really easy. I did this with legs and thighs and left it to marinate overnight in a ziplock bag in the fridge. In the morning, I flipped the bag over and left it alone. My daughter threw it in the oven and it turned out great.

Kentucky Hot Brown

This recipe was good but is way way more than 4 servings! In the future I will cut it in half for my family of four. It is a great way to use up leftover turkey though. I was too lazy to thaw the bacon for frying so I substituted it with sliced ham which was very good.
