Saltine Toffee Cookies

This is now on my list of things I have to make at Christmas. I was a little worried when it came out of the oven. I was sure I was going to have to throw the whole thing out. It really didn't look like it would come out of the pan. I left it alone and when it cooled down, it popped right now. Thanks for the easy recipe.

Christmas Fruitcake

Four weeks ago, I made a quadruple batch of this and hoped for the best. I opened the tin last night to cut some up to bring in to work today to share. It was absolutely fantastic. SO SO SO GOOD. One of my co-workers said it was the best fruit cake he had ever tried. I think the cheesecloth really made the difference. Next year I will start it in October to see if it is even better. Thank you so much for this excellent recipe. I wish I could give it more than 5 stars.

No Bake Rum Balls

Corn syrup people - not corn starch. These are great. Use good rum to make the taste yummy.

Tomato Basil Couscous Salad

Wow this was good. We ate it hot when I made it and then had it cold leftover. I had bulk cous cous so I used 2 cups. I doubled the tomatoes because we really like tomatoes. Excellent and easy!

Chicken Breasts Pierre

Excellent - only word for it. I used skinless drumsticks because that's what I had. Instead of water, I went for the red wine. We served it with penne. What a great meal. Thanks so much for posting this one Nancy!

Baked Pork Chops I

I was feeling lazy so I browned the chops in my cast iron frying pan and then put the cast iron pan into the oven with the foil over top - BIG MISTAKE. The pan got way too hot and the sauce dried out. The pork chops still tasted great though. I am making them again but following the directions exactly, using a baking dish. Great meal for a wintery night!

Apple Crisp II

This is an excellent recipe. The only modification I made was to add a bit of nutmeg and ground cloves to the topping with a bit more cinnamon. We were only 5 people, but we finished this off. It was fantastic. I used fresh from the orchard Cortland apples and fresh ground cinnamon. I have never added water to a crisp before, but it was just right. The sauce was really nice. Thanks for a great recipe.

White Chocolate Raspberry Cheesecake

My daughter requested this for her birthday cake. Fantastic cheese cake!!! I wrapped the spring form pan in foil and put it into a bigger roasting pan and filled it with water. The cheesecake turned out beautiful. We used fresh local raspberries which were in season and a bit tart so they were a wonderful contrast to the somewhat sweet cake. We will definitely make this again.

Tzatziki Sauce II

Great recipe. I have made it a few times and it has always turned out well. I soemtimes add a little dill just for a change. To easily drain the cucumber, I use my salad spinner. I line the strainer portion with paper towel and then spin the cucumber. It dries it out really quickly.

Souvlaki

We've made a recipe very very similar to this for years. I found it in Jeff Smith's Frugal Gourmet cookbook. Yes, I know, soy sauce in a greek recipe? Sounds strange but it tastes great. Serve it with homemade tzatziki, a nice tomato and feta salad and rice. Very yummy

Baked Ziti I

Strangely enough my daughter who hates any sort of pasta or red sauce liked this. It was a HUGE recipe though and I ended up with two casseroles. The second, I froze and reheated later. The reheated one was actually better in my opinion.

Chicken Marsala

I had some dehydrated porcini mushrooms which I soaked in red wine and used in the sauce. The mushrooms made the sauce a beautiful brown colour. It was really good. Also, I added some garlic prior to browning the chicken.

Lynn's Carrot Cake

My husband wanted chocolate carrot cake for his birthday but as we are in the process of moving, I couldn't find my cook book with the recipe. This was pretty close to what I used, but not quite the same. I didn't have enough oil for the recipe and the amount indicated seemed like a ton so I substituted half for applesauce. I had just recently watched a cooking show where the pastry chef recommended mixing cake batter with a whisk instead of an automatic mixer. She said the mixer made the batter tough. I tried the whisk and it was easy and really did seem to improve the batter. It turned out really really good. Moist with a fantastic consistency. Excellent recipe!

Caesar Salad Supreme

This was a winner on all counts - good, fast and easy. I had low fat mayo in the fridge which was a great substitute. Also, I keep anchovy paste in the fridge. It's really convenient for things like this. Most deli counters sell it. I use around 1 - 2 tsp per anchovy fillet. Start with a bit and add more to taste. We had soem left over and made a salad two nights later. It was even better. The flavors had really blended well. Thanks for the great recipe!
