Kielbasa and Kidney Beans

I absolutely love it! I was never a fan of Kielbasa. I added 3 potatoes diced and used red kidney beans. Fabulous.

Yummy Potato Skins

I actually completely changed this recipe. I think the idea was great but changed due to personal preference. I lightly coated with E.V. olive oil and seasoned with the following; Ground Cumin, Cayenne Pepper, Seasoned Salt and dried Thyme. Turned out very well.

Onion Rice

Very good rice! Nice change from the plain white and spanish style rice I usually make. It's Friday so needless to say my pantry and fridge are empty, tomorrow is grocery shopping day. I only had just a little bit of everything and a lot of wine that was given to me for X-Mas. I literally had 1 cup of rice, so I paired this with the Modenese Pork Chops on this site. I also had half a cabbage and fried that up. I had some left over potatoes I made, simply sliced thin (almost like chips) with onions, olive oil and herbs and baked in the oven. It actually turned out to be a really good meal all together.

Modenese Pork Chops

Absolutely love this recipe. My daughter loved it as well, waiting on the hubby to get home from work, but I'm almost sure he'll think it's A-list material. I used one of the many Wines we received for X-Mas, we're not Wine drinkers in my house, but we always seem to get it as gifts and we end up regifting them. I'm happy that I found a way of being able to use the Wine as I always feel bad giving gifts away.

Lentil Soup

Great recipe. Wouldn't change a thing. The only thing was I made this during the afternoon so I did not put the spinach in and while I had every intention on adding it in before serving for dinner, my family was so hungry and thought it smelled soooo good they didn't want to wait for the spinach. I did add the Vinegar (Balsamic) and it was delish. Will absolutely make this again!

Iced Pumpkin Cookies

GREAT recipe! My family and I loved these cookies. My daughter had a friend over so I decided to try this recipe, the friend loved them too and just had to take some home for her family to try. I didn't make the glaze to go with the cookies but we didn't miss it. Actually I will use a little less sugar the next time I make this. I used half white sugar and half brown. I did the same with the flour, half white and half whole wheat. This is a definite A and I will be making thses for Thanksgiving.

Simply Parmesan Chicken

This was a big hit in my home. I added bread dip seasoning to the Bread Crumb mixture. I also drained a can of Diced Tomatoes then spread the Tomatoes onto the Breaded Chiken along with Broccoli florets then sprinkled shredded Mozzerella and Feta cheese and baked for about 30 min. This was AMAZING! The left overs were great as well. The next day I put some fresh basil leaves in the food processor with extra Virgin Olive Oil and blended it together and spread that onto store bought pizza dough (Pilsbury). I cut the chicken into little squares and spread it onto the dough along with a little bit of frozen spinach and baked until the dough was a nice toasted color about 20-25 min. I must say it made for the best Chicken pizza I have ever had!

Pumpkin Chip Cupcakes

Great recipe. My daughter and I really enjoyed these. I made this without the sweets only because I was in the mood for muffins but didn't have the chocolate chips and icing ingredients on hand. I will definately make these again and next time I'll add the icing so needless to say I'll be picking up those ingredients on my next supermarket run.

These came out perfect! I coated the rings in flour before dipping in batter and added some garlic powder and bread dipping spices. My nine yr old does not usually like onion rings but these were a hit with her!

Easy Pasta Fagioli

Great recipe! I used 1 15 oz. can of tomato sauce and one 28 oz can of Diced tomatoes and about 2 cups low sodium chicken broth. Also used a whole onion (diced) and replaced celery with zuchinni (only because we are not big fans of celery), also added some diced red peppers.I used a whole wheat pasta. These amounts worked for me because I have a family of three so it was enough to feed us and have a little bit leftover. It came out perfect not too soupy. It was nice and hearty. My family and I loved this even my 9 yr old and that says it all! Infact I can't wait to have the leftovers for lunch today. =-) I did pair this with a side of fried Cabbage. Fried (sauteed) in butter, a splash of Red Wine Vinegar and some black pepper. A definite A+ in my house, perfect for the coming cold months.
