Easy Turkey Tetrazzini

This was a great recipe for leftover holiday turkey. I did a cup of diced mushrooms, half a cup or so of diced onion. For the sauce I used one can cream of mushroom, one can cream of celery and one cup sour cream. After it was all heated and mixed with the pasta I cooked it at 350 for 30 minutes covered with foil. Then I uncovered, turned off the oven and topped with cheese. I then put it back in the oven while I got the rest of dinner done. It was a great meal, very simple and easy. I'll try it again with peas or broccoli added. Maybe top with bread crumbs or crushed crutons.

Garlic Chicken

This was good, not the most amazing chicken I've ever had, but good. I used a tablespoon of garlic, about a cup or so of crushed croutons and a fair bit of Parmesan. I baked it for about 35 minutes in a stone baker. It turned out flavorful and moist. It's a great start to a recipe and would be good for an accompaniment. The breading wasn't very crisp, in fact part of it came off.

Basil Pesto Sunshine Sandwich

These are pretty good sandwiches, especially when trying to find a veggie option. We forgot the basil leaves and each person customized them. My kids liked the mayo with the basil pesto best. We didn't find sun-dried tomato pesto so we chopped sun dried tomatoes. To roast the red peppers I halved and seeded a pepper and put it under the broiler at 500 for about 15 minutes.

Acorn Squash with Apple

This was a good recipe, but we felt the squash needed something else. We're not big squash eaters. The other ingredients sounded like they'd make this a great dish but it just wasn't that great for us. Will try it again with maybe more brown sugar.

Asian Marinated Pork Chops

Following other reviewers comments I baked these at 350. They didn't need the full 50 minutes but that may have been because they were thinner. I cooked the marinade with a tablespoon of flour mixed with some water and served it with rice and corn. The sauce on its own was a bit too much, but with the pork chops it was pretty good. I reduced the chili paste since I was serving it to a 4 yr old and someone who doesn't like spice. But it was very good and we'll be making it again!

Horseradish Potatoes

I don't know if it was the fact that the potatoes I used were larger or just that I was expecting more of the horseradish flavor. But these were really just buttery potatoes. There wasn't that much to it. I might try it again another time with more horseradish, smaller pieces of potato or what.

Sea Bass with Honeyed Apples

This was a great meal!! We love the fish even on their own and the apples add just the right extra flavor and moisture. I too was worried about the combination. But it was fantastic! Only change is I might cut back on the butter.

Tangy Dill Potato Salad

I really liked this one! Very basic but flavorful. I made up the sauce and let it chill for a day or so. I also poured the sauce over the potatoes when they were still hot. Next time I may add in some celery or other veggies.

Salmon with Raspberry Ginger Glaze

Husband said it was a good dish and a nice change from the usual fish flavor. The sauce didn't thicken as much for me as I had hoped. I don't think the fish needs the last bit of lemon zest. I think next time I will use more ginger and less lemon to get a really deep lemon flavor. You don't need sweetened raspberries either. I also left some of the raspberry seeds in for some texture.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

This was a good basic recipe. I chopped everything very fine in a blender and used a tablespoon of the marinade instead of plain olive oil. It was a bit salty for my tastes and I had cut out the salt. I'll make it again, but will add different seasonings to give it some more flavor.

Oat Crusted Fish

This was pretty good. I added a mix of herbs to the flour and topped it with shredded Parmesan cheese. Next time I will chop the oats up a bit (doesn't need much) and maybe mix the cheese into the breading. I'll also try baking it. This would translate well to other fish.

Pan Seared Salmon I

This was a very quick meal to make, but the recipe was very basic and the flavor didn't have much to it. The capers didn't really add much to the salmon flavor. it might be better with a caper sauce. I'll make it again, but it wasn't fantastic. I too sprayed the pan and then I used a lemon rub on the fish.

Pasta Con Broccoli

A very excellent and simple dish. The flavors are very nice and simple, there's a bit of a complexity it's missing, but with some tinkering with herbs could easily become a gourmet dish. We diced the mushrooms very small and hard larger gits of broccoli. Next time we will add some peppers and various herbs.

This is an ok dish. It didn't smell all that great coming out of the oven. I only cooked them 25 minutes and that was more than enough. It was certainly edible, but bland to me.

Old Fashioned Beef Stew

This was ok but the flavors were off to me. I don't think I will put the lemon juice in next time, that seemed to be the problem with it. I used all the water since we like ours a bit more soupy. But I added beef bouillon for flavor. We always omit salt and sugar in cooking as we find it isn't necessary and adds empty calories. It was no where near as good as the stovetop stew I make from this site.

Unsloppy Joes

This was a pretty good recipe. We used only 1 tsp of the chili powder. It would be great with melted cheddar on top. It also works well on its own or with rice.
