Pineapple Fried Rice

We added ginger and garlic which helped a lot. We also used a lot more soy sauce. It was still pretty bland. It's a recipe worth tinkering with though. I'd used pineapple chunks instead of crushed, throw in some water chestnuts for more texture (otherwise it's pretty mushy), and marinade the tofu. It could work with a sweet & sour sauce.

Slow-Cooked Tamale Casserole

I really liked this. I added a large garlic clove and baked at 350 for 45 minutes. I probably could have cooked it a bit longer. My husband ate it, but isn't a fan of Mexican or casseroles. My toddler didn't like it.

This was VERY moist! We loved it! I broiled it and put the marinade in the bottom of the broiler pan. It was falling apart it was so juicy!

The blend of spices was pretty good. This needs much longer to cook the potatoes unless you chop them very fine. Be sure you only use the amount of potatoes in the recipe. Otherwise you have almost no sauce!

Roasted Garlic Bread

This was great! The garlic needed to be roasted longer- at least another 10-15 minutes. For those worried it's too garlic heavy- roasting really cuts down on that. My toddler ate the toppings right off!

Orange Beef-Style Tofu Stir-Fry

This was ok. Nothing phenomenal. The sauce was pretty basic in taste. There wasn't a lot of flavor. You definitely need to double (or triple) the sauce and vegetables to go with all that tofu (we cut it into thin strips). It takes at least an hour to make with all the frying of the tofu and prep. We added celery and red peppers. We'll make it again, but it's not in heavy rotation.

Really good meal! Very simple and easy to do. You can increase or decrease any part of it as much as you want. I diced up the mushrooms and used a bit less of the tomatoes. You can also add Italian seasonings or black olives.

Black Beans and Pork Chops

This was so easy and very tasty. I seasoned the pork with a bit of Cajun seasoning, garlic powder and some pepper. The pork was a little flavorless if eaten without the bean mix. We may try cutting the meat up before cooking it just to help the flavors mingle more. We also didn't have any cilantro and found it tasted just fine without.

Asian Chicken Noodle Salad

This was a great salad! We left out the chicken and didn't put the sugar in the dressing. We found it didn't need the sugar at all- the soy sauce cut down the tartness just fine. We also put the dressing on as each person wanted it. We have plenty of dressing left over and will make less next time.

Easy Slow Cooker Pork Chops

This was a good recipe. We did a lot of adjustments though. We didn't brown the meat first, just threw it in frozen and it was very tasty and tender. I used 3 granny smith apples sliced, 2 large golden potatoes, 1/2 c apple juice and some nutmeg and cinnamon.
