Vegetarian Moussaka

Time-consuming. Was pretty good but not a five-star. I thought it was fairly bland. Held together well. Used dried lentils becuasse I couldn't find canned. Picture doesn't match recipe. I thought moussaka had mashed potatoes on top like the picture.

Very good. Followed suggestions of less sugar and more peaches. Glad I did so. It would have been way too sweet. The fresh peaches I used were sweet enough.

Quinoa and Black Beans

Outstanding! The flavors were great. We love cilantro. My daughter's boyfriend didn't want to try it but had seconds, which he rarely does, and wants the leftovers for his lunch tomorrow! Healthy and yummy all rolled into one. I served with sald to start.

Stuffed Artichokes

Best recipe I've tried for artichokes so far. Used Italian bread crumbs instead of bread. Perhaps a bit more garlic and I'd love to be able to try baking them.
