Entering the second half of my life and discovered I really love to cook. This discovery happened after I found out I am gluten intolerant and have quite a few food intolerances as well.

Still working on the perfect pizza crust and low carb GF pasta. Thai curries and fresh spring rolls. Slow cooker recipes. Low carb GF recipes.

German Christmas Cookies,potato pancakes,German Cheesecake, Baked or grilled salmon.
My cooking triumphs
Experimenting with gluten free bake mixes and finding the AHA! moment when I find a mix that makes the perfect scone.
My cooking tragedies
Dense, heavy GF scones and attempts at GF biscuits that were like stones. UGH!

Sweet Corn Cake
Tried it and it came out really dry and cakey. I think I may have over cooked it. Will try again.

Apple Crisp II
Excellent easy recipe to build from.Im gluten intolerant so I use my Gluten Free bake mix and I used a mix of 1/2 cup brown sugar and 1/2 cup Splenda. I used 8 Cortland apples and doubled the topping. Instead of the half cup of water I used 2 tbs of Agave nectar and also tossed the apples in 2 tbs of lemon juice mixed with 1 oz of water. Delicious and lower carb!
