I'm a single mom of three boys. My meals need to be filling, healthy and easy because we are always busy.
My favorite things to cook
My family loves when I make my Chicken Broccoli Braid. I have to double the recipe just to have a little leftover for my lunch the next day. The other most frequent requests from the peanut gallery are: lasagne, veggie cheese soup, turkey enchiladas and comfort food casseroles.
My favorite family cooking traditions
We do the whole traditional meals for Thanksgiving, Easter, etc. However, we also have our traditional NON-traditional Mexican dinner on Christmas. Tacos, burritos, enchiladas, guacamole...the whole gamut of foods. We also celebrate St. Patrick's day with corned beef and cabbage along with ANY green foods we can think of. It's fun and something my mother started when I was little.
My cooking triumphs
It took forever to finally get the recipe right for my Veggie Cheese soup. Lots of trial and error, a bit of this, a dash of that. My boys wrote down what we added and now it is fabulous each time.
My cooking tragedies
I made an orange velvet cake for a Halloween party we were attending. It turned out beautifully, bright orange color, smelled wonderful...who knows what it tasted like. As I was carrying it to the door I slipped, did an impressive pirouette and dropped the whole thing upside down just as the hostess opened the door. Good thing other people brought desserts too. They never fail to remind me of my most graceful moment.
