About this Cook
I am a busy stay at home mother of 2, an 8 year old girl and 1 year old boy. I also baby sit a 2 year old boy. I always said I would never be a soccer mom but here I am, running to soccer games on Saturdays complete with the required mini-van! LOL! I love my family and friends and enjoy cooking new foods for them every chance I get.
My favorite things to cook
I love to bake almost anything. I like to try new things every chance I get. I have also been dubbed the family "casserole queen". My fiance is gluten intolerant so I am always looking for new gluten/wheat free recipes.
My favorite family cooking traditions
For any major holliday, Christmas, Easter, Thanksgiving, I always make blueberry muffins for breakfast, just like my mom did.
My cooking triumphs
I finally found a recipe for a gluten-free pineapple upside down cake. You can't tell the difference between it and regular!
My cooking tragedies
I have tried several new casseroles over the years. All though they normally go very well, there have been some that I was embarassed to serve my family. They're always good sports about it though.

Gluten-Free Pie Crust with LIBBY'S(R) Famous Pumpkin Pie Filling
Hven't tasted this crust yet. I am however giving it three stars for ease of making. The crust is very difficult to handle. The wax paper is a good idea but you have to make sure to check that your dough is floured well frequently or it sticks to the paper and the crust is ruined. Next time I will try chilling the crust for a while before rolling it out.

Ground Beef Mexican Style
I am giving this recipe a 4 because my hubby loved it. I wasn't too fond of it however.

Mushroom Pepper Steak
This recipe was great. Next time I will definately omit the tomatoes though. They just don't go with it.
