I am a busy working mother of 3.I always said I would never be a soccer mom but here I am, running to soccer games on Saturdays complete with the required mini-van! LOL! I love my family and friends and enjoy cooking new foods for them every chance I get.
My favorite things to cook
I love to bake almost anything. I like to try new things every chance I get. I have also been dubbed the family "casserole queen". My fiance is gluten intolerant so I am always looking for new gluten/wheat free recipes.
My favorite family cooking traditions
For any major holliday, Christmas, Easter, Thanksgiving, I always make blueberry muffins for breakfast, just like my mom did.
My cooking triumphs
I finally found a recipe for a gluten-free pineapple upside down cake. You can't tell the difference between it and regular!
My cooking tragedies
I have tried several new casseroles over the years. All though they normally go very well, there have been some that I was embarassed to serve my family. They're always good sports about it though.

Bacon Cheeseburger Rice
I had high hopes for this recipe. Unfortunately I found it very bland and a little dry. Next time I will season it more, add mushrooms, real onions and maybe extra bbq sauce. Good start but needs work.

Meat Marinade
I hate giving bad reviews but feel that this recipe calls for it. I followd the recipe to a T and used it on round steak. The marinade did nothing to tenderize the meat. On top of that the meat had a sour flavor. I will definately not be using this recipe again. Sorry.

Apple Pie Muffins
I followed this recipe top the tee and feel it has wonderful potential. However, it definately needs more spices as it leaned towards the bland side. Also it baked in about 20 minutes rather than the 25 listed.
