I am a busy working mother of 3.I always said I would never be a soccer mom but here I am, running to soccer games on Saturdays complete with the required mini-van! LOL! I love my family and friends and enjoy cooking new foods for them every chance I get. I love to bake almost anything. I like to try new things every chance I get. I have also been dubbed the family "casserole queen". My fiance is gluten intolerant so I am always looking for new gluten/wheat free recipes. For any major holliday, Christmas, Easter, Thanksgiving, I always make blueberry muffins for breakfast, just like my mom did. I finally found a recipe for a gluten-free pineapple upside down cake. You can't tell the difference between it and regular! I have tried several new casseroles over the years. All though they normally go very well, there have been some that I was embarassed to serve my family. They're always good sports about it though.
