Tofu and Cheese Stuffed Shells
I really liked the idea of this recipe, but as someone who likes tofu on its own, I didn't see the need for it in the shells. I found the stuffing mix too dry with the tofu. Flavors were good however, so I might recommend this for someone trying to "sneak" tofu in a meal for some protein.

Tofu with Pork and Cashews
Very good sauce for stir fry. I skipped the pork, added broccoli, doubled the sauce as others recommended. Next time I would reduce soy sauce as it could use a little less salt. Thanks! update: I have used this sauce a number of times, doubling all ingredients but the soy sauce. I also used shrimp instead of the pork, which came out wonderfully.
