Big Soft Ginger Cookies

Very nice. I like that they're gingery and not so much full of the other spices like ginger cookies often are. Nice and soft and chewy.

Gingerbread I

Perfectly moist and light and fluffy and wonderful with a slightly chewy crust (I like the corners). The kids all raved on this. I added twice the ginger as I like it that way. Really a lot better than I expected. One of the best quick cakes I've ever made. No more brownies for us!

Plum Clafouti

Stunningly different! We had some plums that were getting a bit iffy. And this recipe turned them into something that my kids loved. My 14yo gave it 20 stars. Easy to make because you only use a blender to whirl the stuff up and pour it over the fruit that you've cut up into the pan. Yum!

Creamy Rice Pudding

All those years my mother made this wrong. I used to hate rice pudding. But this is a little piece of heaven right here. My British husband said it's ALMOST as good as the stuff he grew up with (and he never says that about anything from this continent). I will make this again and again and again. Because we always have leftover rice.

Hot Pepper Jelly

Okay, after much research around the web, it seems that everyone has trouble with this setting, including me. I suspect that some peppers have an enzyme that keeps this from setting properly some of the time. Some peppers seem to be fine and it sets well, others won't set no matter how much pectin you use. So it's like roulette. But darn this is good! My son gobbled jar after jar of this stuff. If I could figure out what makes this NOT set, I'd have quarts full of it.

Brunch Enchiladas

The husband raved on this and the kids ate the leftovers very happily. I didn't make actual enchiladas, rather I layered it like lasagna with torn pieces of the tortillas. This would work well to use up other assorted things sitting around in the fridge, as well, like leftover veggies or potatoes or pieces of meat.

Healthy Banana Cookies

I was skeptical...I mean there's no sugar here! But my picky and sugar-hungry teens ate them and actually told me they were good. They're strangely addictive. I will definitely make again because we're getting awfully tired of banana bread to use up the old bananas.

Hudson's Baked Tilapia with Dill Sauce

Really good. Instead of baking, I sealed them in foil and cooked them on the grill. The Cajun seasoning makes a nice yummy crust, well received by the family.

Spicy Beef Brisket

Absolutely fantastic! Simple to prep...took just a minute and was just stuff from the pantry. And the family gobbled it up! It was so good that my kids begged to have another meal of it at 9pm! Seriously, they just loved it. Not too spicy, just perfect.

Mango Cardamom Bread Pudding

I had such high hopes for this recipe as I love mangoes and I love cardamom. But I did not care for this. Maybe if I'd used fresh french bread or something, but I used old hot dog buns (to use them up) and just maybe that was the problem. What a waste of good mangoes, really.

Avocado Mango Salsa

The family was skeptical...there were raised eyebrows. I told them to eat it with their grilled chicken. One bite...and some mumbles...more chewing...they had seconds...and it was all gone. As my 15yo got up, hurrying back to his computer games, he mumbled, "Really good mom, make that one again." Make sure you use fairly firm avocado and mango, though, or it gets mushy. Can be made with a mild jalepeno, or lots of serranos for more heat. Really, incredibly easy, versatile, and perfect with anything you serve.

The flavor of this is divine. What an incredible and unexpected combination! But reduce the salt. Either use less salt on the rub or use low sodium broth. Way too salty. Will make again and again.

Mandarin Chicken Pasta Salad

My husband and I loved it. It's healthy, has lots of yummy veggies, and the dressing makes for a perfect blend between the sesame oil and the sweet/sour. As for the kids, the 15yo thought apples would have been better than the mandarin oranges, he said they were bitter. The 10yo picked all the veggies out (??!!) and then said she wasn't hungry. So that tells me she liked it.

Santa Fe Style Chicken

Very good and flavorful marinade. Easy and simple to make. But be careful when grilling...there's no fat in this so the meat can dry out quickly and the yogurt tends to burn easily. But take it slow and this one works great. A new stand-by.

Spinach Bars

Well, personally this one is a five star. But my kids didn't like it. I think it would be better if the onions were caramelized first, but doing it this way made it fast and simple. I will do it again...just when the kids are gone. It's a quick one to do when you don't have a lot on hand and forgot to thaw meat.

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

So nice to have a stir-fry with a new taste. My husband loved the hint of ginger on the broccoli and I think the 15yo love this...he was too busy gobbling it down. He did nod briefly as he said "keep" when I asked his opinion on saving the recipe. The 10yo picky eater just picked out the meat. Sigh. But this was fast and easy (like all stir-fries) and delightfully yummy.

Chipotle Shrimp Tacos

The men folk raved and raved about this one. Both "Seafood Teen" and "Habanero Husband" found this to be completely delicious. Using 3 chipotles makes it awfully hot (at least with the brand I used) so test after one and add more if you want it hotter. I used precooked bacon and just warmed it in the pan before adding the onions. Two of us liked it even better with a touch of sour cream on top. It added a great creamy touch.
