We have tried this recipe with grilled chicken and with shrimp and it is excellent both ways! Another nice addition when doing it with chicken is chopped fresh avocado. We make this often for company and it is always met with rave reviews!

I really enjoyed this recipe! I made a few of the suggested substitutions made by others: added a can of chili beans and a can of mild green chilis. Also added 1 red pepper and some mushrooms. And I would recommend only 1 cup of water to start with and add more if you feel it necessary - especially with the mushrooms it was a bit too watery. I will definately make this again! Deliceous and healthy!
