25-Minute Chicken and Noodles

The description says it's a casserole - it is not. It's more like chicken noodle soup and, with that in mind, it's a decent, quick-to-make soup. I, too, needed to add more broth and cooked the noodles 8-10 minutes (according to package directions). I added garlic salt, as well. for a little more flavor.

Gramma's Apple Bread Pudding

Awesome! This was super easy and delicious. I had leftovers the next morning and then thought that the sauce was much too buttery & sweet. But the night before it didn't bother me that way. Maybe I'll try to find a Whiskey sauce to go on top...yum!

Oven Fried Potatoes II

Here are my reasons for 3 stars: 1) raw potatoes are extremely difficult to cut and require more prep time and 2) At the 20 minutes mark when I turned the wedges over they were ALL very soft and I knew the baking time/temp wasn't right. I baked them for 5 minutes more while I heated up vegetable oil in a pan. Then, I fried the fries for about 5 minutes and topped off with some Kosher salt. YUM!

Sirloin with Mushroom Sauce

Delicious! So tasty! I halved this recipe for my husband and I. The only change I made was an addition of Kosher salt to the meat before I browned it on the stove. The sauce was very runny and I wanted to add cornstarch like the others suggested, but I forgot. I served it with a french roll and butter. Wish I had salad or another side with it. The sauce was the consistency of wine or broth, but don't let it fool you, it was delicious!

Old Fashioned Meat Loaf with Tangy Tomato Sauce

I hate to give such a low rating but this meatloaf didn't set! It was a soft mushy dish that looked more like a sloppy joe than meatloaf. I double checked the recipe and I followed it exactly. I wonder what I did to get such different results than the others.

Joe's Special Scramble

Delicious! I made this recipe for 2 - my husband and me. I used 1/2 lb ground beef and eyeballed the veggies based on what we had scraps of in the fridge - lots of spinach, 2 big mushrooms, 1/2 an onion and 1/4 green pepper - + 2 cloves of garlic and 2 eggs. I followed the recipe exactly (true, with a small variation in vegetables) until the very end. I may have turned my stove on too high in the beginning because by the time the onion cooked clear I thought the meat was very well-done. When the egg started taking a long time to cook I didn't want the meat to go bad so I ended up scrambling it a bit. Next time I'll turn my eletric stove on 5 from the start rather than 7 (medium high). Still, it was so tasty and easy!
