Corn Casserole III

Oh my gosh, when I'd finished mixing the ingredients I wasn't so sure how this would turn out, but looks were certainly deceiving! DELICIOUS!!! I subbed two eggs for the butter and like many others used the box of Jiffy Corn Muffin mix and added a couple of tablespoons of sugar. Thanks for an absolutely delicious recipe!

Traditional Mashed Potatoes

Fantastic! Thank you so much for a delicious, standard mashed potato recipe. (By the way, I didn't have whole milk so I used one part skim milk and one part half-and-half and it turned out great!)

Gaye's Microwave Fudge

My fudge turned out very creamy, but quite lumpy and the chocolate taste was a bit too rich/bitter. If I try this again I will use a bit less cocoa and try sifting the sugar/cocoa mix before adding the milk and butter. I think it could be great for a quick dessert with a bit of tweaking. Thanks for the recipe!

Pecan Pie V

Absolutely fantastic! I can't wait for my husband to get home and try this pie. :) I doubled the pecans and shouldn't have, but the pie is wonderful. Next time I'll make the recipe as stated. Thanks for a great pie without the icky corn syrup!

Cranberry Apple Pie III

This pie is fantastic! I've made it twice now and we gobble it up. :) I definitely need a deep dish crust for the filling and like others subbed oats for the bread crumbs. Thanks for a delicious recipe! I'm sure it would be great with the bread crumbs; we just prefer the oats. :)

Banana Muffins II

These are really, really good! I added a couple of tablespoons of applesauce as well as a teaspoon of sugar and vanilla. They're moist and flavorful, but could've used just a bit more sugar. Thanks for the recipe!

Easy Morning Glory Muffins

Very good muffins! Thanks for the recipe. :) Next time I will make sure to drain the carrots as the mixture was quite wet and the carrot taste a bit overshadowed the other flavors. Still, very tasty! As always, I replaced the vegetable oil with applesauce.

Rich and Creamy Tomato Basil Soup

This soup was rich and delicious, and definitely more a bisque than a soup. The cream and butter are fantastic but next time I'll leave those out--the tomato and basil combination on its own was divine!

Apple Blueberry Cobbler

The cobbler part was pretty tasty, but the topping left something to be desired. Perhaps adding some oats and perhaps melted butter to the mix could've made for a better crunch-type topping. I ended up with a couple inches of floury topping, but when mixed with the cobbler the taste was pretty good.

Chicken Spinach Quiche

Really good recipe! I used bacon in place of the chicken (was all I had), all of the spinach and 3 tbsps sour cream and an 3 extra eggs in place of the mayo to make enough for 2 pies. The quiche set up really well and tasted delicious! Thanks for a great recipe!

Oregon Salmon Patties

Nice salmon patttes--could've used a little more oomph--but overall they were pretty good. I think I'll add some more spices next time. Like others, I didn't add back in the salmon liquid and chose to use olive oil in place of the butter and shortening. They turned out really nice. Thanks for a good recipe!

Spinach Brownies

Banana Cranberry Muffins

These are absolutely fantastic--my new favorite muffin recipe! I also used brown sugar in place of the 2/3 cup white sugar and butter in place of shortening. Next time I'll add some cinnamon as well. Thanks for a fantastic recipe!

Bacon and Tomato Cups

Delicious! I have made these twice now--once with the biscuits and once with the phyllo cups. We much prefer the biscuits! We used a regular muffin pan since we don't have a mini one. Dividing the biscuits in half works like a charm. We used just a dab of sour cream (just enough to moisten) in place of the mayo. Fantastic! Thanks for sharing. :)

Soft Chocolate Chip Cookies II

I followed this recipe exactly but really don't like the taste of the cookies. They're not very sweet and the shortening taste is very prominent. They did turn out soft though. ***Update*** I originally gave this recipe only 2 stars because I didn't like it very much, but my husband took the cookies to work and all the seasoned bakers were begging for the recipe. Many said they were the best cookies they'd ever tasted. I felt it only fair to update the review. I probably would've liked them much better the next day as well.
