Italian food! I cook other styles, but it is by far my favourite type to experiment and have fun with. Since I live in the desert, Mexican-style food is also a close second.

I recently made Spinach-Chicken enchiladas entirely from scratch and then prompty wanted to die from the time and mess I made. lol
My cooking tragedies
Who hasn't burned something they were really looking forward to?? I can cook, but I can't seem to bake. Everytime I try to make fresh bread, I ruin it somehow. *shrug* My mom, on the other hand can bake anything and make it taste good! Guess it skipped a generation. hah

Famous Pork Chops
This was nice and simple, and easy because you should have the ingredients on hand. I used Socialable crackers, not Ritz and love the even more buttery taste. I covered for the first half-hour, then left uncovered for the last 15, to make sure it wasn't mushy. So good! Will definitely use again when I don't feel like being fancy with my chops. Can't wait to try on boneless chops.

One-Dish Chicken, Vegetable and Rice Bake
It's not bad, and very easy to make - finding the right size long grain wild rice pack really helps - try Uncle Tom's - the Rice Roni boxes are two small now since they've reduced their size. It also helps to season your chicken a bit as well. Helps with the bland taste issue.

Pesto Cheesy Chicken Rolls
This is the best recipe I've ever used on this site - hands down. Delicious with a capital D. I freaked out at first because I realised when I started cooking that I forgot the toothpicks, but it still came out tasting great. I followed the recipe for the most part - all I did different was I added the step with the breadcrumbs/egg wash and covered the breasts for the first half-hour of baking. The chicken was so tender and tasted amazing with the melted cheese and pesto!! Restuarant quality meal!
