Very good recipe. It definitely needs to be spiced up. I added carmelized half red onion, chili powder, curry powder, and salt. I also added chopped bell peppers. I reduced the number of eggs to three and used two cups of sharp cheddar cheese (instead of the recommended three cups). I took the liberty of adding some sour cream which gave it a really nice flavor. Had to keep it in the oven slightly longer (at least 35 minutes). Overall, good for breakfast or brunch!
