Dill Pickle Meatloaf

I thought this was very good!! I did make a few substitutions though. I used a cup of Zesta crackers instead of the bread. I also substituted the pickles and pickle juice for banana pepper rings and juice. I didn't have any pickles in the house and it ended up being a GREAT substition! I will make it again. Even my one year old loved it and I have the hardest time getting him to eat ground beef.

Antipasto Pasta Salad

I made this for my son's birthday party. It was a total hit!!! I made it only with salami, not need for pepperoni too. Added cauliflower for a little crunch and also added a can of chopped artichokes. I also added large chunks of mozzeralla cheese, instead of Asiago, along with some grated parmeson to coat everything. I also added sliced black and green olives. Soo good! I would maybe use white balsamic vinegar next time. Really loved it!!!!

Shrimp Scampi Bake

I thought that this was good. My husband likes the traditional way to make shrimp scampi much better, but I really enjoyed the different flavor (the djion) and it seemed a bit healthier than the versions that the shrimp is sitting in a bath of butter. I used precooked shrimp, which made the shrimp a bit overcooked in the end, next time I would buy raw. (but that is what I had on hand) Overall good recipe.

Lyonnaise Potatoes

I really liked this recipe. I used frozen hashbrowns for this recipe, which made is REALLY easy. I thawed the harshbrowns slowly in the microwave first, while I was sweating the onions. (which took closer to 30 minutes) I also baked it for close to an hour so that the top of the hashbrowns started to get crispy. The carmelized onion gave the side dish really good flavor. I would make this again!

Spaghetti Squash Medley

I made this recipe because I had a spaghetti squash from my garden that I didn't know what to do with. Recipe was pretty good...I added leftover sausage and more seasonings to add flavor. (since those posting said recipe needed it) I used frozen veggies, since that was all I had. I would use fresh if I ever made it again. I also did not microwave at all, I used the top of the stove and then baked at 350 for 20 minutes. It was a good way to use up veggies and leftovers.

I had leftover goat cheese froma party, that I didn't know what to do with. This recipe was simple and tasty. It was a nice light lunch for me that used up items that I had on hand!

Bacon Chicken and Dumplings

Good comfort food. I added carrots, celery and peas and garlic, but omitted the corn, since I didn't have any in the house. I also used red potatoes, since that is what I had. I also used cream of mushroom soup instead of the half and half and it turned out really yummy. I also just used Bisquik for the dummplings. Good recipe, I would make it again.

French Onion Soup I

Wasn't the best I have ever had, but was fun to make. We carmelized the onions for a very long time before finishing the soup, not sure if that helped the soup or not. I don't think that I will try this recipe again.

Baked Asian-Style Honey Chicken

I added extra soy sauce and added Dijon mustard and rice vinegar to the marinade and let it sit overnight. (Otherwise it seemed like there wasn't enough to marinade and baste it.) I seared it quickly on the stove top in my Dutch oven and placed it in the oven at 350 degrees until juices ran clear. It was a hit!

Hamburger Pie

I thought that it ended up being a bit too soupy, but it had really good flavor. I added a little garlic, but otherwise followed the recipe. I would maybe add another potato or two, next time.

Pork Dumplings

I really loved this dish!! I have never made anything like it...fun! Quite time consuming (wrapping the wontons), but worth it!! I froze most of them on a cookie sheet and then bagged them, so that I can pull them out as an appetizer any time! My husband asked me to deep fry them next time, but I think I would like it either way. They were a hit at my Asian food themed party!
