Fish in Foil

These folil wrapped fish ideas are the greatest. Very little clean up and they taste great. I also do this with salmon, a little olive oil, S&P and a few slices of lemon.....deeeeevine!

Basic Chicken Salad

delish, I did add some dijon mustard, some dried cranberries and some fresh chopped tarragon, that always perks up the flavor of chicken and all my friends rave about it.

Lentil Soup

Very nice and tastey. I had to make some substitutions since the cupboards were a bit bare. Used herbs de provence for spices and had no tomatoes so I used a can of condensed tomato soup. Threw in a ham bone and it came out great, reheated very nicely the next day too and as is the case for so many soups and sauces allowed to sit overnight, tasted even better.

Robin's Best Ever Hummus

This recipe worked well but I completely left out the salt, I would taste it before I added any at all as the tahini is salty. I left out the rosemary but added in some chopped artichokes and black olives, a little seasoneed salt and olive oil over the top, add an olive in the middle and it looks (and tastes) like something you ordered in a restaurant. YUM!

Macaroni and Cheese V

great tasting and easy to make. Added in some leftover ham and also shredded up whatever cheese bits I had leftover from my holiday appetizer tray, jack, Gouda and Edam, in addition to the cheddar. I had to tweak the amounts of salt and mustard based on the saltiness of the cheeses and I added crumbled up Cheezit crackers on top. This recipe is a keeper.

Scalloped Potatoes II

Nice and creamy but I added what I add to many dishes like these, freshly ground nutmeg. Its amazing how it wakes up the flavors....also great on spinach and brussel sprouts too

Hearty Split Pea Soup

I made it last night and it tasted great. I just wish that this soup wasn't quite as thick. I have tried extra water and milk and still it just thickens up so much that within a few hours the spoon almost stands in the bowl all by itself...any ideas, folks?

Crescent-Wrapped Brie

I too have been making this for years, using the crescent rolls in the can is key to it being easy and tasting like you spent all afternoon making it. Try adding stuff to it like,olives,pepper flakes,mushrooms, walnuts,tobasco, capers, smoked salmon,sun dried tomatoes, the list is endless. Great crowd pleaser

My Favorite Pork Turkey Meatloaf

Great tasting and the key is to make sure to cook the onions,peppers, celery & carrots ahead til soft (some recipes have you add it all in ahead uncooked and its not as good)I also ran out of ketchup and glazed the loaf with a steak sauce and brown suger mixture, yummy, I sometimes like to add in several whole mushrooms right down the middle if I'm serving it for company and it looks real cool when you slice it and the there is a perfect mushroom right in the middle of the slice. Try it!
