About this Cook
I am a happily married father, guitarist, and amateur cook. I am a big fan of grilling, and, increasingly, healthy cuisine.
My favorite things to cook
Fajitas, chili, burgers, cream of crab soup, tacos, refried beans, Spanish rice, stir fry.
My favorite family cooking traditions
We don't really have any. My father didn't cook, and my mother cooks mostly Southern style, which I am not a huge fan of, due more to health concerns than taste preference.
My cooking triumphs
The cream of crab soup that I made for the first time today. My wife says that it was more delicious than the soup that we have gone out of our way to eat since we were teenagers, so that was a huge compliment.
My cooking tragedies
The first time I made twice-baked potatoes, it was for our first wedding anniversary. After about three hours of hard work, I ended up with bland, mushy potato-like lumps and dirtied about 90% of our small kitchen.

Chili I
Perfect chili recipe as is. If you're very sensitive to heat or have kids that are, I would halve or omit the cayenne, but the amount here isn't spicy to my taste.

Salmon with Lemon and Dill
This dish is very lemony, but in a satisfying way. I think that, as previously mentioned, one will want to back off the dill by about half, and it would help to reduce the cooking time to about twenty minutes and/or cover the dish in aluminum foil to help keep it moist.

Broccoli Chicken Divan
As mentioned before, it is a little on the bland side as prepared here, but a little bit of salt and an herb or two can help with that. We went with a little marjoram and oregano. Also, when cooking the chicken, we cooked it with garlic, salt, pepper, and a little bit of lemon juice. You can pretty much tweak it however you like and make it a five-star recipe for you!
