Grandmother's Buttermilk Cornbread

Wow this was good! If you have a cast iron skillet, that's definitely the way to go! We used a TBS of lemon juice with just under a cup of milk, let it sit for 5 min, and used it in place of the buttermilk. Perfect!

Baked Chicken Nuggets

I've made this so many times, and it's delicious! However, I liked it so much better when I added a cup of crushed corn flakes to the mixture and a 1/4 tsp cayenne pepper. It made them crunchy, and with almost a tiny bit spicy. Absolutely delicious. Add the corn flakes!!! You'll love it!!!

Baklava

Yummy! Way too sweet though. Next time I'll cute the sugar by at least half. The honey mixture definitely needs to be made ahead of time and cooled. Also, I made 1 and a 1/2 times the amount of honey mixture, which worked out perfect. Yummy recipe, and not very hard to make.

Easy Ice Cream Cake

This was good, but not great. We didn't use the peanut butter...the idea seemed kind of weird to me. We doubled the hot fudge, and used vanilla ice cream instead of whipped topping. We crushed several frozen snickers bars and put them in the vanilla ice cream layers. The kids loved it, but I wasn't crazy about it. Definitely needs more than an hour to freeze (at least if you're using ice cream instead of whipped topping). Easy to make though, and pretty good. Fun!

No Bake Cookies III

I always used another recipe that said 90 seconds, and I tried this today to see if it worked better. It needs at least 90 seconds, if not 2 minutes. I made these for a neighbor, and they turned out mushy and too sweet. Definitely boil for at least 90 seconds, and cut the sugar by about half a cup. Then they'll be wonderful!
