Eggplant Appetizer
I was very disappointed in this recipe and I'm SOOOOO glad I didn't use the original proportions of ingredients, but only wasted one of each of the vegetables. The mixture come out to be a very strange and unappealing flavor and I think it needs A LOT more work to turn in into a decent appetizer.

Green Velvet Soup
Delicious recipe! I love the fact that it has flexibility as far as ingredients and their quantities (but still easily keeps great texture). Also, the color green comes out really pretty, unlike the "poopy" green color of a split pea soup :)

Chocolate Coconut Bars
Love this recipe! The second time I made it I also added some chopped nuts and it really enhanced the flavor and texture. I also like backing these on 9x13 pan and making them a little thinner.
