Black Bean Vegetable Soup
This soup was so easy and delicious! I used low sodium chicken stock instead of veggie, switched out the corn for hominy, used shredded carrots from a bag (much easier to prep)and added a little extra chili powder. It was fabulous! I will be making this again and again. :o)
