Zesty Succotash
So satisfying. I switched out the butter for 1.5 T olive oil. Also, I used Tapatio hot sauce, as it was what I had on hand. I eliminated the salt, and it was still fully flavored. I am not sure how long I cooked it, as I put the kidney beans on heat first, followed by the corn and peas. Then I started prepping the pepper and onion, and added them as chopped. The beans were mostly split open from cooking by the time all was done, and I really liked them this way. I made this last week and I'm back to make it again tonight.
