Hello to all the cooking and baking world. My name is Connie Mendoza and i'm 29 years old. I love to cook and bake for my husband and 4 little boys (ages 7, 4, 3, and 9 months). I'm very crafty and love a budget challenge. It seems that i'm ALWAYS on a budget (I wonder why with 4 boys? DUH!) and i've found some amazing ways to cook some wonderful meals for a low price. I've been cooking and baking since i was 8. I remember the first thing i ever cooked was a scrambled egg. The next day i was taught how to make chorizo with eggs. I grew up in a strong Mexican heritage household but i don't speak Spanish! (GO FIGURE! Parents never wanted to teach us kids. They wanted to talk about us without us understanding so they kept that language from us! HAHA) I cook a lot of mexican food with all the spices and herbs that make it so yummy and was taught very early on that I HAD to know how to make homemade tortillas. THANKSGIVING! I know i know. Not too original but hello!? What other day of the year do you ever make that much food? A few years back i got the word out to my entire family (extended included) that Thanksgiving would be at my house that year. Everyone seemed shocked because as the host that meant that i provided all the food. I was shocked that they didn't think i could pull it off. My mother and husband were the only one's that were confident in me that i was gonna rock the house. Not even my father thought i was gonna pull it off (than again he's a really big jerk so i have no idea why i was suprirsed). For some reason i always make the most moist and delicious turkeys that everyone talks about. Funny thing is i'm not sure how i do that. It just happens every year. hahaha I had to much food made and dishes that they didn't even know how to make themselves.
