Prosciutto Wrapped Asparagus

This is is so yummy - my guests were amazed by the look & taste of this dish. I made with chive & onion cream cheese & also put a little olive oil & salt on the "exposed" part of the asparagus before putting into the oven. These take a little bit of time & the proscutto can break as you're spreading the cheese, but it doesn't matter once you get it on the asparagus. Try it!!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

I made this for a family reunion of 30+ people - I can't believe how awesome this recipe is!!! Everyone RAVED - my husband, who is mainly a beef man, said this was his new favorite dish. You have got to try this - you will WOW your dinner guests. The planks are a big touchy - we didn't pay too much attention when we basted the fish & the olive oil got down in the grill, so we had to wipe them off & try again because they kept catching on fire :-) But, it didn't make any difference in the taste of the fish...SOOOO delicious & even good cold the next day!!

Strawberry Spinach Salad I

I made this for a family reunion of 35 people!! I debated if it was a good idea because of trying to mix the dressing with the salad and not get it too soggy, so I halved the recipe & just waited until the first bowl was gone & whipped another one right up. They loved it so much that they requested it again for the next night! I don't use all the dressing it calls for - I think it definitely would make it too soggy, so I just eyeball it (and keep the rest for leftovers) Also, use glazed walnuts - they are delicious with this salad!!!

Whit's Chicken Enchiladas

These were a huge hit with my family of 20+...Added 1/4 c. white onion & 1/2 packet of taco seasoning per other's suggestions. I also made one pan of flour tortillas & one with corn tortillas to find out which I liked better - Both were awesome!! I also used the white meat from a rotisserie chicken - very easy & light cream cheese!!! YUMMY!!
