Black Beans and Pork Chops
This was absolutely delicious! Such a nice southwest twist to pork chops. I used the boneless pork chops and medium heat salsa. The medium added just enough spice and my daughter was still able to eat it. I cut up the pork chops and mixed it all with some brown rice, which was AMAZING!

Parmesan Roasted Corn on the Cob
This recipe is great, but it works best if you lather everything on AFTER the corn is done on the grill..that way nothing sticks to the foil. Also, put some chopped fresh cilantro on it and squeeze lemon juice! Made this way, it is AMAZING!

Beer Lime Grilled Chicken
I was less than impressed. I"ve made something like this before, but without the beer and it was 100 times better. I even marinated the chicken overnight, and it tasted incredibly bland. I will be shredding up the remainder of the chicken to put in a casserole so it doesn't get wasted.
