Chicken Chile Spaghetti
My husband is still eating as I write this...his 3rd or maybe 4th helping (I lost track!). It was awesome! The only change I made was that I boiled 4 boneless chicken breast (still frozen) till they were cooked through and used the broth from that plus a little extra to boil the pasta. I also used the Rotel "hot" version of the chopped tomatoes. Next time I am going to try Velveeta light so I can consume more with out worry about the calories so much! I will also use a little less pasta.

Bean Burrito Casserole
This is excellent for a quick, throw together recipe! It is great as written or it also lends itself to changing up for lots of variety. For those of you that are turned off by the cream of mushroom or chicken soup and sour cream mixture try adding a 1-2 tablespoons of cumin to the mix. You can also forget the sour cream and soup mixture completely, and just top with canned enchilada sauce for a quick "pan burrito" recipe. Hormel no bean chili mixed with the sour cream and canned chili peppers also works well. I have also made this with the other variety of burritos (beef and beans etc). Enjoy!!

Golden Chicken Casserole
This a great recipe that is quick and easy. I added green pepper and onion chunks, extra water chestnuts (because I love them!), 2 tablespoons of soy sauce and 2 table spoons of the drained pineapple juice to make it a little saucier. Adding the soy sauce really makes this dish great!!!
