About this Cook
I love cooking for friends and family and get great joy from spending a day or 2 preparing and cooking a big meal, then to sit down as a group and devour... When I'm not cooking or eating... I enjoy travelling and snowboarding, also like to read, swim and circuit train (got to shift those extra calories somehow).
My favorite things to cook
I will have a go at (almost) anything... But I guess regular faves are Mexican, Thai and of course Sunday roast. I love making cakes and muffins too, I have a very sweet tooth!!
My favorite family cooking traditions
Christmas... lovely steamed puddings, rich iced cake, spicy pickles.
My cooking triumphs
Christmas day a few years ago when I was a vegi... I made a roast vegetable crown which consisted of a filo pastry crown with a beautiful cheese souffle inside and topped with roasted veg. I was the only vegi at the table and it served about 8!! Needless to say everyone had to try it and there was hardly any left.
My cooking tragedies
A spanish flan for pudding which just went terribly wrong from the beginning and didn't set properly so i disguised it by covering it with brown sugar and making little brulee's instead!! I don't think anyone noticed...

Chocolate Surprise Cupcakes
WOW!!! I have made these twice now, once for my family the other for my Mums & tots group and both times a complete success. The mums thought they'd been 'professionally' made!!! I added the cream cheese frosting I recipe from this site cos I wanted them to look just like the pic, and you know what... they really did. Will def make again and again...

Cream Cheese Frosting I
YUM!!! I didn't add the cream as I wanted a frosting that I could pipe and that would sit and stay on top of my cupcakes, also needed to add a bit more icing sugar to thicken it up a bit. The result was a really scrummy frosting that really made my cupcakes.

Grandmother's Buttermilk Cornbread
Loved it! Having eaten cornbread at many places in America I tried to find it here in the UK, but not much luck so just had to make it myself... Followed the recipe exact and it was perfect, brought happy holiday memories flooding back.
