About this Cook
Work at home mom. I have two children, son-2 and daughter-1. I like to cook only when I'm in the mood because I find it hard to come up the new meals my husband likes, because he's a vegetarian and I'm not( almost not quite). So I do a lot of casseroles to get a mix of veggies for the kids and that's also tasty.
My favorite things to cook
enchiladas, casserole, cookies, cakes and cupcakes.

Incredible Potato Casserole
I absolutely loved this and so did my kids, which made it a big hit for me, and my husband loved it even more and that made it an even bigger hit, since he's picky. I added some veggie crumbles, corn, peas and extra cheese to make it a main dish. This was so quick and easy (especially using the already shredded hash). This will most definitely be put on my dinner list.
