Heather's Cilantro, Black Bean, and Corn Salsa

Incredible! The only thing I would probably change is to use real diced tomatoes and another avocado. The canned tomatoes were just weird. I found myself trying to avoid them. Other than that, it is a really filling dip and great for parties! It's easy, cheap, awesome, and different from the usual party dips (cheese dip, guacamole, etc.)

Barbeque Beef Casserole

I've never enjoyed BBQ sauce so much! Fantastic recipe! Of course I used garlic in the meat, beans, juice from the tomatoes, one box of cornbread, doubled the BBQ sauce, basically all the suggestions everyone else wrote. But I thickened it all up with a flour and water mixture before I layered it in my baking dish. I put cheese on top of that, but wish I had used more. I used half a can of corn with the meat and veggies, and used the other half in the cornbread. The one box was just enough to bake up to about a half inch on top. If I had another box of cornbread mix I would have liked to use it. In the end I served it with a nice salad and it was an incredible meal!

Easy Slow Cooker Chicken

Ok, this recipe is easy, and it has potential, but it must be adjusted. First, I don't think it matters what cream of _____ soups you put in, it comes out creamy and flavorful. But I do think adding more spices is necessary. So garlic salt, onion salt, paprika, salt and fresh ground pepper all made a big difference. Second, just cook the rice separately in a rice cooker. After reading the reviews about the rice issues people were having, I still decided to put my rice in and just cook it longer. Nope, five hours later some of the rice was cooked, and some of it was super hard. Third, adding some fresh veggies like onions and celery ( others suggest peas or broccoli) really give it some texture. The chicken came out fantastic, but I had to scrap off the inconsistent rice and do without. I was bummed, but I learned my lesson.

Indian Chicken Curry II

INCREDIBLE! I lived in India for six months and never had curry like this!!! I followed the recipe except I added four potatoes and simmered for another 20 minutes to cook the potatoes. Everyone said to add more curry, but I only added 1 more tbsp and a dash of turmeric. The flavor was fantastic. I also did not have tomato paste, but I read if you boil tomato sauce to let some of the liquid evaporate, then that will do just fine, and it did! Some people may be afraid to add the sugar and the cinnamon, but really in the end all the spices blend soooo well and come together nicely. Awesome recipe, and fairly easy. Thanks!

Chicken Enchilada Casserole I

BEAUTIFUL! A few changes...1) I eliminated the chicken broth and cream of celery. I just mix a can of enchilada sauce with cream of chicken. 2) I saute some onions, sliced garlic, and red bell pepper and add it to the mix. 3) I make sure to drain the can of tomatoes and green chillis because doing that and eliminating the chicken broth leaves the mixture with a nice thick consistency 4) I add a can of drained black beans! 5) I layer torn up corn tortillas, chicken mixture, and cheese. Then I top it with sliced black olives and jalapenos from my garden!!! It is even better on the second day.

Chicken Marsala

awesome and easy! few changes...1) sliced up garlic and added to the sauce. 2) doubled the marsala and wine sauce and thickened with flour to have extra sauce for the angel hair pasta I served the chicken on!

Basic Chicken Salad

Great recipe! few changes...1) I used a handful of chopped pecans. 2) I used half of a crisp apple chopped as well as chopped celery and purple onion 3) I also sprinkled in some tarragon for a little zip! came out awesome! I make this at night and let it chill and make sandwiches the next day for lunch or for road trips. it's so easy and delicious!

King Ranch Chicken Casserole I

awesome! sauteed garlic and onions first. added them to the mix and layered torn up corn tortillas, chicken mixture, then cheese, repeated, and served with sour cream! My husband's absolute favorite dish!

Ground Beef Quiche

few changes...1) i used a mashed potato crust from left over mashed potatoes. Just grease the pan, spread the potatoes around the pan, cook on 350 for 30 min. 2) I ended up cooking it a bit longer because i think the mashed potato crust throws it off a bit. It was still really tasty! I seasoned the beef with garlic, onion, cumin, pepper, oregano, etc.

Hamburger Soup I

great! few changes...1) I added cubed potatoes, left out the corn, and put less stewed tomatoes. 2) i also left out the basil but used dried oregano and parsley flakes instead. 3) I threw everything in the pot, used double the water and beef bouillon, sliced garlic, and added a cup of barley. Brought it to a boil, and then let simmer. I fed this to my sick husband and he really enjoyed it. We ate it all day long. Added some shredded pepperjack on top and saltines on the side!

Mom's Shepherd's Pie

amazing! Few changes...1) I seasoned the beef some would say "mexican style" with onions, garlic, red bell pepper, cumin, oregano, chili powder, onion powder, plus the tomato sauce and parsley and salt and pepper, but i didn't have worcestershire sauce. I still thicken the beef with flour as well. 2) I don't mix the beef with the green beans. I put down the beef first and then the green beans and finally the potatoes. Of course I top it all with cheese! My mom always made this for me growing up, and now I think with this recipe, mine is probably better than hers! ;)

Broccoli with Lemon Butter Sauce

awesome! few changes...I steamed broccoli and made the butter sauce in a pan. I minced one clove of garlic and I served the butter on the side so people could put as much on as they wanted. It was so delicious!

Easy Rosemary Chicken

Awesome! Few suggestions...1) I lined the pan with foil for easy clean up. 2) I sprinkled some lemon juice in the pan and then in the sour cream/cream of chicken mixture! 3) I added some milk to make the mixture not so thick. 4) I sliced one garlic clove into the mixture as well. It turned out great! I used all white chicken strips and served it with steamed white rice. All the extra sauce I used over the rice and placed the chicken on top! One of the best meals I've had and made!!!

Fusion Hummus

Awesome! I used extra garlic and extra fresh rosemary from my garden, and I put a tad more Balsamic Vinegar. I took it to a baby shower and served it with pita chips, baby carrots, and sliced red bell pepper. Everyone loved it and several people asked me for the recipe!

Sour Cream Chicken Enchiladas

Super delicious!!! I used corn tortillas instead, and even though they were a bit mushy, they were still fabulous! For the sour cream sause I used my own home grown jalapenos, a can of green chile enchilada sauce (old el paso brand), a can of green salsa which included tomatillos and jalapenos, and of course the sour cream and cilantro. It was great! I made some cheese filled enchiladas and some with chicken that I boiled and shredded. I served it to my husband with sliced avocados and a dollop of sour cream on top. He loved it and we ate it again the next day!

Broccoli Chicken Casserole II

The curry really does wonders! I boiled and shredded my chicken and steamed my broccoli using my rice cooker. I served the creamy broccoli chicken casserole on a delicious bed of steamed rice. I put in a bit more curry and lemon juice and just used the kroger brand of cream of chicken soup. It was creamy and delicious with an amazing flavor, but without the rice it might have been too rich. Great recipe and I like that there aren't too many ingredients involved! thanks!
