Zesty Slow Cooker Chicken Barbecue

This was awesome. I used KC Masterpiece BBQ Sauce (low calorie). Turned out perfect. Will make again, but next time I am planning to add a few jalapeno peppers and some red onion to give it some crunch.

Caribbean Grilled Crab Cakes

My first attempt at crab cakes was good. I tried to "lighten" up the recipe using low-fat & fat-free items. They were good. I did not make the salsa to go with them. But plan to next time I make these.

Cream Cheese Jalapeno Hamburgers

This was a great burger. I used 95% lean ground beef & fat free cream cheese. Usually my burger lean beef burgers come of the grill dry, but these were not. Perfect! Will make again, and again! Fresh jalapeno's have become a staple in my home.

Apple Cheese Pizza

This was good, I replaced the pizza crust with crescent rolls. I liked these, although I cut my apples thin so next I will cut them thicker. The crescent roll was awesome, gave it a nice crust.

Lasagna Spirals

These were good. Not as cheesy as lasagna but good. I used fat free ricotta and light mozzarella cheese. In half I chopped up some Italian meatballs and added that. I did spread the mix to thin and ended up with about 15 spirals instead of 10. I had fun with the presentation of this dish.

Cola Beans

Creamy Cream Cheese Frosting

I read some of the other reviews and used 7-8 oz of cream cheese. The was to runny to spread as a frosting, but I left it in the bowl and we just spooned some on our pear bread when we had a piece.

Bacon Ranch Pea Salad

I used low-fat ranch dressing and fat free cheese. It was good. But I have to say it was better the 1st day than the 2nd or 3rd. But I will try this again and use some of the other idea's in the reviews.

Bekki's Mexican Egg Rolls

This was an awesome recipe. My husband loved them. There was extra so the next day I warmed them up with just a pan, no oil and they got crispy again.
