Beer Cooked Chicken
Pollo (Chicken) Fricassee from Puerto Rico
About this Cook
I'm semi retired living in the middle of the Arizon High desert. I have 5 retired racing greyhounds and a standard poodle. I do some work for Greyhound Adoption. My business also involves dogs and dog products. :) I spend hours each week sewing, quilting and making other goodies!
My favorite things to cook
I love to make bread, it makes the house smell so good! Light and low cal dishes are some of my favorites and I enjoy taking old family favorites and paring out the calories and fat! And probably my very favorite is making authentic Mexican food. I love hot and spicy espcially. And living this close to the border, I can easily get my hands on those special ingredients!
My favorite family cooking traditions
Family traditions for me are German. I love German food and cook it often. I have many of my Mom's recipes that her Mom gave her and they are great!
My cooking triumphs
I've had a few! My best triumph is my tamales, not terribly hard at all, but the process is a bit tedious.
My cooking tragedies
When I was a newly wed, my SIL helped me to make beautiful fried chicken.. and at the last minute I put a little salt on it and the lid from the salt fell off. Bless my DH, he ate it anyhow! I've never attempted to fry chicken again. My first turkey wasn't too hot either!

Chicken Sopa
I added onion and fresh garlic along with some hot peppers and it still was bland. I would add cumin and crushed red peppers and more jalapeno peppers to it at minimum if I try this again. I would probably add more cheese too. And maybe even a package of taco/burrito seasonings. But like others, I was dissapointed and expected more taste, esp. with adding the things I did.

Slow Cooker Orange Chicken
I made this and added a few touches, a tbs of ginger, and a tbs of pepper and a tbs of garlic. 2 fresh chopped small onions and some green onions as well. It was good and I will make it again. I'm going to try using OJ next time instead of the orange soda. :)

Crunchy Tossed Salad
This is SOOOOO good! I made it and took it to a church lunch and it was GONE very quickly. The dressing alone is fabulous. I've used it on a spring mix salad instead of Iceburg and it's very good. I've also made the dressing with Splenda instead of sugar to pare down a few calories. This is a keeper for sure.
