Braised Lamb Shanks
I made this with chevon (goat) shanks, which are a lot like lamb. Very tasty! The meat was tender and the tangy flavor is great with mild-tasting meat like lamb or goat. I did reduce the balsamic vinegar by half, and it was still tangy and tender.

Beet Bundt Cake
This cake is very good. Moist, chocolatey and has a nice texture. I have been cooking large batches of beets from the vegetable garden, pureeing and freezing in 2-cup containers for use when making this cake. Just thaw overnight in the fridge and they're ready to go. Everyone I have served this cake to loves it. My husband especially likes it with ganache drizzled over the top. I like it just plain.

Pickled Asparagus
This pickled asparagus is delicious! Very easy to make, too. A pretty and unusual addition to an antipasto or salad. Friends rave about this.
