Chicken a la Fire Station

This was good, not spectacular. Hubby thought it was very good. I did use low fat soup and lite sour cream, and only 3 chicken breasts (so only 3 Tbsp butter and not the whole pkg of dressing mix.) Served with rice, we like lots of sauce but of course still have some left over.

Smothered Bacon Chicken

Used light sour cream, reduced fat soup and thick bacon which was on hand. Husband loved this recipe. Microwaved the bacon slices one minute (1 slice for each chicken piece) before cooking, not quite enough time as I needed to zap it a bit at the end also. With regular bacon I think that would work okay though and that's probably what I will do again. Great flavor.

Slow Cooker Chicken Tetrazzini

3 stars for ease of preparation, good for weeknight. Salty for us. Used 3 boneless skinless chicken breasts as that is what I had, and it was enough for the 3 of us. (We like sauce on our spaghetti; if I'd had 6 chicken pieces there would have been more "juice" to the sauce I'm sure.)Used reduced fat soup and cream cheese. I shredded the chicken before serving. We did add parmesan cheese on the top when plated. Served with vegetables. This may work for a longer time on low, rather than the 3 hours on high, for those who aren't home in the afternoon to start this for dinner. I'll post if I try it that way.

Strawberry Cream Freeze: Serve it Your Way!

Great light dessert for Memorial Day BBQ. Due to the diabetics in the family, made this with reduced fat cream cheese, sugar free pudding mix, 2% milk, sugar free Cool Whip, reduced fat vanilla wafers, and sugar free strawberry ice cream topping-which I didn't even know existed- and everyone thought this was wonderful. I can't imagine how even much better the full version as listed would be. I used the muffin tins for mini-pies. Creamy, not too sweet, not overtly cheesecake-y, it was a hit!

French Spring Soup

Took me significantly longer to chop the vegetables. I did not add the garlic that other reviewers suggested but did use half chicken broth. Needs something. I tried adding cheese in the bowls but that's not it. The next day slightly improved as others have noted. Maybe adding slightly less water and a can of cream of asparagus soup would help?

Easy Roasted Pork

Made in crockpot as this was a busy day. (On high, set for 6 hours and then it automatically goes to low). I am a big fan of the oven bags though, this would be great that way I am sure. House smelled so good when I came in! The cinnamon applesauce I used was sweetened with Splenda, and I didn't pack the brown sugar because, um, we are supposed to be watching that. This just sounded so good though! I used a 2 lb pork tenderloin, did not brown first (I never do) and served with rice, green beans, and the cinnamon applesauce also as a side. Ginger as listed. I poured off the crockpot juices into a saucepan and thickened with cornstarch mixed in with about 1/3 cup water, brought to boil to thicken it. Served the sauce over the pork and also the rice. Very good. Hubby gave 4-1/2 stars, I'd say 4 if this were any sweeter as written. Will make again and I'm giving the recipe to my young adult kids- easy, cheap especially when the meat is on sale, and tastes great.

Pork Chops with Apple Curry Sauce

Milder crockpot version using pork roast: I used a 2 lb pork roast, and since I was using a crockpot, cut the apple juice to 1 cup as suggested for the original, chopped the onion and apple into dice-size pieces. Used Honey Crisp apple to see if would hold shape better and the pieces on top of the roast did. I only had cinnamon flavor applesauce, sweetened version with Splenda, so I cut the curry powder down to 1 Tbsp just in case the cinnamon made it too much. Next time I will add more, but this was mild with a curry flavor. I also used ham soup base as I had no chicken bouillon; I don't think it makes a difference due to the curry flavor. Used 1/8 tsp garlic powder as substitute for the garlic. I did not caramelize the onion, just put it with apple chunks on top of the roast, which I did not brown either. (Did not use margarine.) I did mix the other ingredients together though before pouring over everything in the crockpot, cooked for 5 hours on high and we liked it. Smelled WONDERFUL while cooking. It was not spicy. It made a LOT of sauce, 4-1/2 cups - might decrease the apple juice and add some apple jelly instead next time. This sauce might be good with ham or another meat so I didn't throw out the leftovers yet.

Zesty Slow Cooker Chicken Barbecue

Very tasty, made this with KC Masterpiece BBQ sauce (regular) and it did make quite a bit of sauce. However, there is only 2 of us, we only ate 1/2 of it; will see if it is too much when the leftovers are shredded. Mashed potatoes and corn good accompaniments.
