Bean 'N' Rice Burritos

I made this tonight because I wanted an easy meal that I could make from things I already had in the kitchen. I made the same kinds of changes as others suggested - I sauteed an onion with fresh garlic and the cumin and I added about a teaspoon of Adobo seasoning as well. I also added a handful of frozen corn while it was simmering near the end. We wrapped it up in homemade tortillas with cheddar and they were delicious. I'll make this again.

Lee's Incredible Momos

These came out really yummy! Dumplings are one of those things that I just crave sometimes, and these were made with things that I normally have in the pantry anyway! I steamed half like was suggested and then pan-fried half in about 3 Tbls. vegetable oil because I didn't want to wait another 30 mins. Both were equally delicious. The fried took about 7 minutes. Chewy Granola Bars

I was looking for a recipe that would be healthy and delicious - this one is it! My alterations were: 1/3 c. flax seeds, 1/3 c. sunflower seeds, 1/3 c. pumpkin seeds. I omitted the chocolate chips except for at the very end of the baking, I sprinkled chocolate chips over the top (maybe 1/4 cup minis) just to add some sweet. They came out really good! Thanks!

Sweet Corn Cake

This recipe is now a staple in our home - whenever I plan on making something remotely Mexican, my husband gets a grin on his face and says, "how about that corn cake thing?" Needless to say, we never have leftovers.
