Delicious Black Bean Burritos

Reviewed: Jan. 7, 2009
This burrito was REALLY good! My boyfriend hates everything in it except the jalapenos and black beans, but I wrapped it all up so he couldn't see the ingredients and he LOVED IT and asked for seconds, and couldn't even guess what was inside of it. He was in awe when I told him all of them. I added a little lime juice because it did come out a little dry, but next time I think I'll add diced tomatoes as others have suggested and a little sour cream added to the mix. Thank you!!

Butter Bean Burgers

Reviewed: Oct. 17, 2008
This came out really well. I did have to add more crackers to the mix to make it hold together better but that wasn't a problem. I poured a packet of dry onion soup mix into it by mistake because I was looking at another recipe at the time that called for one, and that gave it a lot of extra flavor I think. I will be making these again, thanks!

Rich Pasta for the Poor Kitchen

Reviewed: Oct. 13, 2008
My boyfriend and I really enjoyed this, it came out way better than we expected! I added a ladle full of the pasta water into the sauce as others suggested and I think that helped wrap the flavors around the pasta better. Thanks!

Simple Turkey Chili

Reviewed: Oct. 3, 2008
This came out really good and was extremely simple to make. I didn't have any kidney beans so I just used black beans only, also I like a lot of flavor so I used about 4 tablespoons of chili seasoning, I omitted the paprika, and instead of cayenne pepper I used chili pepper about 1 1/2 tablespoons. Thanks for the recipe, I will be making this again!

Burger or Hot Dog Buns

Reviewed: Sep. 28, 2008
Based on other readers rave reviews, I'm sure it is just me and not the recipe, but mine came out really bad. I salvaged a few and just ate them with jelly, but they came out nothing like buns, more like hard biscuits and still weren't even cooked in the middle.

Sauteed Apples

These were amazing!! Followed the recipe exactly and did not have to make any sort of adjustments at all. I will be making this time and time again! I served it on ice cream, but will definitely be trying it out on some things others have suggested. Thanks!!

Cheese Garlic Biscuits II

Reviewed: Sep. 28, 2008
These were fantastic! I had to do them in two batches and the first batch came out tasting a little doughy in the middle (even after soaking them in the garlic/butter mixture) So for the second batch I added a dash of garlic powder into the dough and this helped with that, but next time I might actually add a little minced garlic instead to get an even richer flavor. All in all, still 5 stars = amazing

Cheese Lasagna

Reviewed: Sep. 28, 2008
This was a great recipe but I changed several things. I used cottage cheese instead of ricotta and only 3 eggs instead of 4. When mixing the cheese and eggs I added in a bag of mozzarella cheese to it to get the extra cheesey flavor throughout the dish (otherwise it would not have been cheesey at all). Also, on top I added some mild cheddar cheese as well to make it look more like lasagna. With those changes it came out fantastic. - Thanks for the recipe.

Carrot Burgers

Reviewed: Sep. 25, 2008
These are amazing! I have two batches out of the pan, haven't even finished cooking them all, and have already started picking at the already cooked ones and CAN NOT wait to eat. I did have a problem with my mixture being a little runny/soggy, so I added in a few handfuls of crushed saltine crackers and that really helped a lot. Next time I make these I will just skip the cornflakes and go straight for the saltines like I do with salmon and tuna patties. Thanks for the recipe!

Potato Curry

Reviewed: Sep. 25, 2008
I doubled the spices in this recipe and, thanks to my favorite Indian restaurant, still thought it came out bland. If you are accustomed to rich flavors that you will get at the restaurant, then definitely triple or quadruple the amount of spices added in. Also, it tasted better the day after making it rather than the night of. I will be making it again just because it was simple, filling, and the idea is right, but my tastes require stronger spices.

Unsloppy Joes

Reviewed: Sep. 18, 2008
This was absolutely delicious. I followed the recipe exactly except I only added in 1 tablespoon of chili. 1 1/2 would have been way too much. I will be making this again for sure! Update: I had plenty of leftovers because I ended up eating this by myself; my boyfriend said it was no substitute for sloppyjoes (I disagreed) but that it might make a good spaghetti sauce. So today that is what I did with the left overs. I put them back on the stove in the pot and began reheating, added 1/3 cup of water, 2 tblsp of the tomato paste, 2 tblsp of olive oil, 1/2 tsp. each of garlic powder and oregano, and a large pinch each of ground thyme and parsley, then I put it over cooked pasta. I used egg noodles because that is all I had on hand at the time, but I think it would be even better on angel hair, or shells even as a form of goulash. To top it off I added parmesan cheese. My boyfriend was actually right about something! It came out really well.
