Quinoa and Black Bean Chili
This was great! Loved the flavor and texture. Though I skipped the jalapenos so my kids would like it. It was a little drier than I expected but we all still liked it. Next time I would add more tomatoes to the recipe. I did add a small can of diced tomatoes with jalapenos to the left overs the next night. Overall a great recipe.

Key West Chicken
This recipe is good, but nothing special. It's great for a pinch when you don't know what to have because it is easy and you are likely to have the ingredients on hand.

Pork and Green Chile Casserole
This was great. I made it for camping and made it the night before and everyone liked it. Instead of baking it, I reheated in a pot and then added the cheese. I will make it a little spicier next time to suit my taste.
