Make Ahead Breakfast Casserole

Reviewed: Dec. 29, 2009
I made this recipe exactly as stated, but when I realized my mother did not have croutons in her kitchen and I was not about to run to Safeway on Christmas Eve at 5pm, I decided to substitute with stuffing mix. It was all I had. Unfortunately that substitution caused the entire dish to taste verrrry stuffing-y and anyone who dished out a piece of casserole had to leave about half the crust behind to be able to taste the cheese and meat etc! But that was my fault, I would love to try this recipe again with croutons or my own homemade croutons. Aside from this minor issue the casserole was delicious. I cooked and drained the sausage then sauteed sliced mini portobello and button mushrooms with a very small onion... YUMMM. This is a keeper and I cant wait for the next time I make this!

Healthy and Delicious Cherry Pie

Reviewed: Dec. 22, 2009
First time I'd ever made any kind of "pie", and I had sacks of fresh cherries that needed to get used up, so I didn't expect perfect results. However what came out of the oven was pretty darn tasty! Like others said, it may be more of a tart or crumble than a "real" pie, but because it was so easy, and tasted fine, I give this 4 stars!

Byrdhouse Blistered Cherry Tomatoes

Reviewed: Dec. 22, 2009
Wonderful, simple & healthy recipe for tomato LOVERS! I had a garden overflowing with cherry tomatoes of all colors and I needed a recipe to use them up. Found this and loved it. I ate every last one and my boyfriend enjoyed them as well. I would recommend using home-grown or locally grown tomatoes for a tastier experience!

On Wisconsin Beer Brats

Reviewed: Dec. 22, 2009
I made these for an Oktoberfest party and they were completely gone by the end of the night, and everyone was raving. You can't really ruin brats, but this recipe is one I will keep because it really showcases what I love about bratwurst. Thank you!!!

Pumpkin Ravioli with Hazelnut Cream Sauce

Reviewed: Dec. 22, 2009
Flavor-wise, wonderful and tasty! Ease of preparation, however, is not! This was my first time attempting ravioli and I tried hand-making pasta.. Hmm, that was an epic fail! I bought wonton wrappers from the grocery store and those were much easier to work with. They stuck together when I boiled them, though, and I basically had to make a ruined-ravioli "casserole". It tasted wonderful though. I will try these again when I have more patience with myself!

Mississippi Mud Cookies

Reviewed: Dec. 22, 2009
These were delicious - Loved that there was coconut in them! Maybe it was just me, but these cookies did end up a little on the crumbly side. I tried to set them on wax paper before they cooled of too much but a lot of my cookies were still kind of falling apart. Oh well, still delicious! Thank you!

Cream Cheese Christmas Cookies

Reviewed: Dec. 22, 2009
I love these because you can make them waaay ahead of time, and bake them when you need them! Incredibly simple but they ended up becoming my aunt's new favorite holiday cookie! I made these exactly as the recipe called for, by the way. I am going to keep this recipe to make these cookies EVERY Christmas from now on!

Cranberry Orange Cookies

Reviewed: Dec. 22, 2009
I made these for my family's annual Cookie Day (the ladies bake from sunrise to sunset and we assemble assorted cookie platters for friends) and they were wonderful and fun to make! Everyone enjoyed the "healthiness" of these cookies, with the orange zest and cranberries. I am keeping these on my recipe list for next year!

Italian Chicken Skillet

Reviewed: Aug. 5, 2009
a wonderful and simple recipe that really does only require one pan! The only thing I would do is decrease the amount of cheese as I found it a little overcheesed, but everyone's preference is different! This is a great recipe to add to or replace ingredients, and it will still taste awesome. Thanks!

Kraut Balls

Reviewed: Jul. 31, 2009
OH my goodness! I love sauerkraut, my b/f does not. This was probably the most original recipe I've found yet that utilizes sauerkraut, which I was trying to get rid of. These were too easy & fun to make! I had only 1/2 lb. sausage & was cooking for two, so I halved the recipe. [Using less cream cheese is TOTALLY OK!] I used half a pkg. of cream cheese and threw in a couple wedges of Wee Brie for extra creaminess. I didnt even freaking let the mix sit for an hour before rolling them into balls and baking them; my b/f RAVED and said they were soo-oo delicious. I served them alongside fresh sauteed grean beans and they made a great meal! This is SUCH a keeper, especially for a German sauerkraut loving girl like me!

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Jul. 22, 2009
Wonderful, I LOVE fish tacos and made this with mahi mahi tuna. The only thing I didnt have was adobo sauce and had no clue what to replace it with, so my sour cream mixture was a bit bland. My own fault though. We had other stuff on hand to put on the tacos, and they were just deelish.

Poulet a la Saucisse

Reviewed: Jul. 21, 2009
This stuff was just amazing! My boyfriend loved the sausage stuffing for the chicken and, although it wouldnt all fit into the chicken breasts without oozing, he would not let me put any of it to waste! this is a visually delightful dish, especially as you are cutting it down the middle! I think I may have added a bit too much parmesan, it was a little salty in the middle. My fault for not using a measuring cup though! Also be SURE to use one of those meat pounding mallets, I have done this recipe once without the proper tools and it was 100x harder! It makes a world of a difference. This will be kept on my dinner rotation!

Beef and Broccoli

Reviewed: Jul. 17, 2009
I thought this recipe seemed really easy to make, the ingredients are simple compared to some of the beef/broccoli recipes on here. I read all the other reviews and based on that, I nearly halved the amount of condensed tomato soup in my recipe. I found that a whole can would be a little much/slightly Americanized, but start with half a can and work your way up, keep tasting to see what you prefer! Aside from that, I also added chopped onions in the beginning with the meat, and used chili paste in place of crushed red pepper, because i love spicy. I used some hoisin sauce because I had some on hand, but reduced the amount of soy sauce due to my usage of the hoisin. All in all, my guy was impressed and we both ate everything on our plates... No leftovers this time! :)

Fast and Easy Tofu Lo-Mein

Reviewed: Jun. 9, 2009
this was SO incredibly EASY and for the quality of ingredients used, it tastes wonderful! You can change the spices, types of oil or veggies all as you feel like, and the recipe would still taste good. I'm broke and I was able to pull this off with the stuff in my kitchen. I would recommend this recipe to anyone who doesnt mind Tofu.

Hearty Meatball Soup II

Reviewed: Mar. 30, 2009
I made this last week and am still having leftovers! Wonderful with some french bread. I substituted sausage meat for the ground beef, as that's all I had. still totally delish. I added canned corn, amongst other veggies just to clear out my pantry a little; it was soo delicious but I almost needed a larger pot as I was bordering on overflowing my big soup pot! Take into consideration what fresh vs canned veggies you may be adding to the soup. The canned stuff should be added more towards the end of cooking, because they're already quite soft and done. Everything that I put in that was fresh, was put in towards the beginning to give it more cook time.

Creamed Chicken 'n' Veggies

Reviewed: Mar. 20, 2009
very simple way to make a delicious side dish to a dinner!! I used fresh broccoli (sauteed) and canned beans (just added to the broccoli after that was cooked through in order not to get the beans soggy) and NO chicken - i know, way to completely disobey the recipe! - but generally adding alfredo sauce to veggies is wonderful and easy! I will definitely be keeping this around!

Seared Ahi Tuna Steaks

Reviewed: Mar. 20, 2009
I know that ahi tuna is delicious and have had it made for me before, however, this was my first time making it on my own! So of course, it turned out good but it wasn't ideal. I had no chipotle pepper so I used a little cayenne pepper mix. Halved the salt but found myself wishing I had used a teensy bit more! My peppercorns for the most part weren't popping or softening much even after 5min. Must have been older stuff. My oil started smoking and my apartment had to be aired out halfway through the process. I turned the heat down from Med/Hi to Medium just because I didn't want excessive smoke! When I popped my tuna on, I watched the clock (and this was on Medium heat as well) and flipped it after just under 2 minutes. Ended up crispy on the outside and rare in the middle, but it still tasted wonderful for a first time tuna experience so I'm not really going to complain!
